How to make yeast dough for coffee buns
Crumble the yeast, add sugar and lukewarm milk - mix. Cover and set aside in a warm place for about 20 minutes.
15 g fresh yeast,
1 teaspoon sugar,
120 ml milk
Pour flour and sugar into the mixer bowl, add oil, egg, and yeast starter - knead into a smooth dough.
300 g wheat flour - all-purpose,
40 g sugar,
50 ml oil,
1 egg
Cover the bowl with the dough with a cloth and set aside in a warm place to rise - for about an hour.
Briefly knead the risen dough, place it on a kitchen counter and roll out thinly to a thickness of about 0.5-1 cm.
Spread Nutella over the top of the dough.
100 g Nutella
Sprinkle with cinnamon mixed with coffee.
1 tablespoon cinnamon,
1 tablespoons instant coffee
Roll the dough into a log along the longer side.
Cut the dough into slices - I got 8 pieces.
Arrange the buns on a baking sheet, cover with a cloth and set aside for about half an hour to puff up.
Meanwhile, preheat the oven to 170 degrees (fan-assisted).
Bake the risen coffee buns for about 20-25 minutes - until nicely browned.
After baking, cool the buns.
How to make coffee glaze for yeast buns
Transfer the powdered sugar to a bowl.
150 g powdered sugar
Add the cooled coffee spoon by spoon and mix until combined.
approx 3 tablespoons coffee
Spread the glaze over the buns.
