  • 15 g fresh yeast (- or a 7 g packet of dried)
  • 1 teaspoon sugar (- for yeast)
  • 120 ml milk (- warm, not too hot!)
  • 300 g wheat flour – all-purpose (- 2 cups)
  • 40 g sugar (- less than 1/4 cup)
  • 50 ml oil
  • 1 egg (size L)

  • 100 g Nutella (- see notes below the recipe for substitutes)
  • 1 tablespoon cinnamon
  • 1 tablespoons instant coffee (- powdered)

  • 150 g powdered sugar (- 1 cup)
  • approx 3 tablespoons coffee (cooled)

How to make yeast dough for coffee buns

  • Crumble the yeast, add sugar and lukewarm milk – mix. Cover and set aside in a warm place for about 20 minutes.
    15 g fresh yeast, 1 teaspoon sugar, 120 ml milk
  • Pour flour and sugar into the mixer bowl, add oil, egg, and yeast starter – knead into a smooth dough.

  • Cover the bowl with the dough with a cloth and set aside in a warm place to rise – for about an hour.

  • Briefly knead the risen dough, place it on a kitchen counter and roll out thinly to a thickness of about 0.5-1 cm.

  • Spread Nutella over the top of the dough.

  • Sprinkle with cinnamon mixed with coffee.

  • Roll the dough into a log along the longer side.

  • Cut the dough into slices – I got 8 pieces.

  • Arrange the buns on a baking sheet, cover with a cloth and set aside for about half an hour to puff up.

  • Meanwhile, preheat the oven to 170 degrees (fan-assisted).
  • Bake the risen coffee buns for about 20-25 minutes – until nicely browned.
  • After baking, cool the buns.

How to make coffee glaze for yeast buns

  • Transfer the powdered sugar to a bowl.
    150 g powdered sugar
  • Add the cooled coffee spoon by spoon and mix until combined.

  • Spread the glaze over the buns.

I’ve been craving yeast buns for a while now, and I finally baked them. This time I went for a chocolate-coffee combination, and I must say that these coffee buns with coffee icing taste absolutely exquisite! Especially when enjoyed with a cup of coffee. This is a real treat for coffee lovers and those who enjoy coffee flavors – if that’s you, you absolutely must try them!

How to make buns with Nutella and coffee – tips

We start preparing the buns with the yeast dough, as it needs time to rise. If your home is cool, I recommend placing the bowl with the dough in an oven preheated to 30 degrees Celsius. In such conditions, the dough will rise quickly and nicely. The filling itself won’t take long to prepare and doesn’t require any special steps. Simply mix cinnamon and instant coffee powder together.

What instead of Nutella for coffee bun filling?

If you don’t have Nutella or any other chocolate spread at home, or if you don’t like it, all is not lost! Melt 100g of milk chocolate with 1-2 tablespoons of milk or heavy cream in a double boiler. Let the chocolate cool slightly and spread it over the rolled-out dough. You can also prepare the buns without chocolate. In that case, spread about 60g of soft butter over the dough. And mix cinnamon and coffee with 75g of sugar (preferably brown sugar, but white sugar can also be used). Then sprinkle the butter with this mixture, roll it into a log, and cut it into pieces. If children are going to eat the coffee buns and you’re concerned about the coffee, you can replace it with grain coffee – the buns will still taste delicious!
