- 125 ml milk (at lukewarm temperature)
- 50 g sugar (¼ cup)
- 300 g wheat flour – all-purpose (2 cups)
- 1 egg (size L)
- 40 g butter (soft)

How to make pistachio-chocolate buns step by step
Step 1 – preparing the yeast dough
- Add the dough ingredients to a large bowl and knead into a smooth and uniform dough.3 g instant yeast, 125 ml milk, 50 g sugar, 300 g wheat flour – all-purpose, 1 egg, 40 g butter
- Cover the bowl with the dough and set aside in a warm, draft-free place for about an hour until it doubles in volume.
- Melt the chocolate – e.g., in a double boiler.approx 50 g chocolate
- Chop the pistachios.approx 30 g pistachios
Step 2 – preparing the buns
- Remove the risen dough onto a lightly floured surface and knead briefly.
- Roll out into a thin sheet about 0.5 cm thick.
- Spread the pistachio cream over the dough.approx 50 g pistachio cream
- Pour the melted chocolate over the pistachio cream and spread thoroughly.approx 50 g chocolate
- Sprinkle the entire dough with chopped pistachios.approx 30 g pistachios
- Roll up the dough into a log, starting from the shorter side.
- Gently mark 8 portions on the rolled dough – I first mark the center of the entire log, then the centers of each half, and then the centers of each piece again.
- Cut the dough into buns using a thread or a knife.
- Arrange the buns in the prepared pan (greased with butter and floured) – leave space between the buns.
- Cover the pan with a cloth and set aside for about half an hour for the buns to puff up.
- Meanwhile, preheat the oven to 180℃ top/bottom heat.
Step 3 – baking the buns
- Remove the cloth from the pan and place it on the middle rack of the oven.
- Bake the buns for about 25 minutes – until nicely browned.
- Let the finished buns cool slightly.
Step 4 – decorating the buns
- Transfer the pistachio cream to a bowl and heat briefly to make it more liquid.approx 50 g pistachio cream
- Spread the cream on top of the buns.
- Finally, sprinkle the tops of the yeast buns with chopped pistachios.approx 30 g pistachios

Why make pistachio-chocolate yeast buns?
My pistachio and chocolate buns today are inspired by the very fashionable Dubai flavors from not long ago. Dubai chocolate with pistachios is still a real treat for many of us, and these pistachio and chocolate yeast buns might help satisfy that craving ;) I prepared the buns using my repeatedly proven recipe for yeast dough for buns, and added a filling of pistachio cream, melted chocolate, and chopped pistachios. The whole thing turned out delicious, fluffy, and crunchy from the nuts. My detailed step-by-step recipe will allow everyone to prepare such buns in their own kitchen. You must try it!

What ingredients are needed to prepare pistachio and chocolate buns?
To make such Dubai-style pistachio-chocolate yeast buns at home, you will need a few basic ingredients. Below is a condensed list of products I used and possible substitutes.
- pistachio cream – this is a sweet cream that you can get in larger stores and discount supermarkets. At Lidl, they are essentially in constant stock, and at Biedronka, they are usually also readily available.
- chocolate – you can use milk, dark, or dessert chocolate here – it depends on how sweet you want the buns to be
- pistachios – in the recipe, I give the weight of shelled pistachios; you can, of course, use more or less – depending on the amount you have. You can also use salted pistachios – the combination of salty nuts with sweet filling will be excellent!
- butter – instead of butter, you can also use soft vegetable butter or oil

Can pistachio-chocolate yeast buns be made with fresh yeast?
Yes, of course, you can prepare these buns with fresh yeast. In that case, transfer 15g of yeast to a bowl, add a teaspoon of sugar and gently combine, then gradually add lukewarm milk and mix thoroughly. Cover the bowl with foil or a cloth and set aside in a warm place for about 20 minutes for the yeast to activate – it should visibly thicken and increase in volume. Then add the entire yeast starter to the bowl with the remaining dough ingredients and knead together. Continue following the recipe from there.

Why doesn’t yeast dough rise?
The most common reasons are ingredients that are too cold, inactive yeast (old, stale, spoiled), or insufficient rising time. It’s also important not to overheat the milk – too high a temperature can destroy the yeast. If your yeast was of poor quality, or was destroyed by milk that was too hot, then unfortunately you must add a new portion – you don’t have to prepare a completely new dough if you are using dry yeast – just add it to the dough and knead again. If you are using fresh yeast, it’s best to prepare new dough, or add a little flour to what you already have, otherwise the dough will be too runny.
If your home is cool, or there’s a draft, the dough will also rise more slowly. If you want to speed this up, I recommend turning on the oven to heat to 30 degrees Celsius and placing the covered bowl with the dough inside. In such conditions, the dough will rise much faster and much more strongly.

How to store yeast buns to keep them fresh?
Pistachio buns are best stored in an airtight container or covered with a cloth at room temperature for up to 2-3 days. You can also gently warm them before serving to regain their softness. I often heat such two-day-old buns in the microwave for about 30 seconds – this makes them light, fluffy, and soft again.
Can pistachio-chocolate yeast buns be frozen?
Yes, yeast buns freeze very well. After cooling, place them in an airtight container or bag and freeze. Before serving, thaw and reheat in the oven. It’s best to freeze such buns for a maximum of 3 months.
