How to make poppy seed sponge cake
Beat the eggs together with sugar until a thick and fluffy mixture is formed.
8 eggs, 200 g sugar
Meanwhile, sift the flour together with baking powder through a sieve.
150 g wheat flour - all-purpose, 2 teaspoons baking powder
Add the ground poppy seeds BackMit to the flour and mix until combined.

Add the flavoring to the beaten eggs (if using).

Reduce the mixer speed and gradually add the flour with poppy seeds, mixing continuously.
Line the baking pan with parchment paper.
Pour the batter and bake in an oven preheated to 170 degrees Celsius (fan-assisted) for about 35-40 minutes - until a dry stick comes out.
After baking, cool the sponge cake and cut it into 3 layers.
How to make cooked cheesecake
Melt the butter in a large pot.
200 g butter
Add sugar and quark cheese - mix.
200 g sugar, 1 kg quark cheese
Add eggs one by one - mix the mixture thoroughly.

Cook the quark cheese until small bubbles begin to appear.
Add the puddings mixed with milk to the quark cheese and mix thoroughly.
2 packages vanilla pudding, 200 ml milk
Cook until the mixture thickens - you can blend the cheesecake with an immersion blender at the end to make the mixture more uniform.
How to assemble cooked cheesecake on poppy seed cake
Place the bottom layer of poppy seed cake into the pan and spread about half of the cheesecake mixture onto it (you can pour it hot).
Place the second cake layer and spread the rest of the cheesecake mixture.
Cover the top with the last cake layer.
Heat the heavy cream, and when it's very warm, add the broken chocolate to it - stir until it melts.

Spread the glaze over the top of the cheesecake.
Chill the cheesecake in the refrigerator for at least 4 hours.
