Mix the yeast with sugar, add lukewarm milk and stir until the yeast dissolves. Cover with a cloth and set aside in a warm place for about 15 minutes.
15 g yeast, 1 teaspoon sugar, 150 ml milk
Pour flour into a bowl, add sugar and egg. Pour in the yeast mixture and start kneading the dough.
300 g wheat flour - all-purpose, 1 egg, 30 g sugar
While kneading, add the melted butter and knead until a smooth dough forms.

Cover the bowl with the dough with a cloth and set aside to rise for about an hour.
Meanwhile, prepare the cream.
How to make chocolate cream for doughnuts
Whisk the egg yolks together with sugar until light.
2 egg yolks, 20 g sugar
Add both flours and whisk briefly.
10 g wheat flour - all-purpose, 10 g potato starch
Slowly pour in some hot milk and mix thoroughly.
150 ml milk
Pour the egg yolks into the rest of the milk in a saucepan, add coffee and bring to a boil.
approx 50 ml coffee
Cook, stirring constantly, until a thick pudding forms.
Remove the saucepan from the stove.
Add the chopped chocolate and stir until it melts.
50 g milk chocolate
Cover the surface of the pudding with cling film and set aside to cool.
How to make doughnuts with chocolate cream
Take the risen dough out onto a lightly floured kitchen counter and knead briefly.
Roll out the dough or flatten it with your hands to a thickness of about 1-1.5 cm.
Cut out circles, knead the scraps again and cut out more doughnuts.
Cover the doughnuts with a cloth and leave them for about 30 minutes - to puff up.
Heat oil in a pot - pour in at least a few centimeters, so that the doughnuts can float freely.
Fry the doughnuts on both sides until golden brown - check with a toothpick if they are ready (if the toothpick is sticky after inserting it into a doughnut, they need to fry a little longer).
Drain the finished doughnuts on a paper towel.
Transfer the cream to a piping bag with a nozzle and fill the still warm doughnuts with it.
You can additionally sprinkle the doughnuts with powdered sugar, or make a simple glaze.
