  • 15 g yeast (fresh, or a 7g packet of dried)
  • 1 teaspoon sugar (for the yeast)
  • 150 ml milk (lukewarm)
  • 300 g wheat flour – all-purpose (- 2 cups)
  • 1 egg (- size L for me)
  • 30 g sugar (- 2 tablespoons)
  • 30 g butter (melted)

  • 20 g sugar
  • 10 g wheat flour – all-purpose (- level tablespoon)
  • 10 g potato starch (- level tablespoon)
  • 150 ml milk (hot)
  • approx 50 ml coffee
  • 50 g milk chocolate (- chopped – you can add more)

How to make yeast dough for doughnuts

  • Mix the yeast with sugar, add lukewarm milk and stir until the yeast dissolves. Cover with a cloth and set aside in a warm place for about 15 minutes.

  • Pour flour into a bowl, add sugar and egg. Pour in the yeast mixture and start kneading the dough.

  • While kneading, add the melted butter and knead until a smooth dough forms.

  • Cover the bowl with the dough with a cloth and set aside to rise for about an hour.
  • Meanwhile, prepare the cream.

How to make chocolate cream for doughnuts

  • Whisk the egg yolks together with sugar until light.

  • Add both flours and whisk briefly.
    10 g wheat flour – all-purpose, 10 g potato starch
  • Slowly pour in some hot milk and mix thoroughly.

  • Pour the egg yolks into the rest of the milk in a saucepan, add coffee and bring to a boil.

  • Cook, stirring constantly, until a thick pudding forms.

  • Remove the saucepan from the stove.
  • Add the chopped chocolate and stir until it melts.

  • Cover the surface of the pudding with cling film and set aside to cool.

How to make doughnuts with chocolate cream

  • Take the risen dough out onto a lightly floured kitchen counter and knead briefly.
  • Roll out the dough or flatten it with your hands to a thickness of about 1-1.5 cm.
  • Cut out circles, knead the scraps again and cut out more doughnuts.

  • Cover the doughnuts with a cloth and leave them for about 30 minutes – to puff up.
  • Heat oil in a pot – pour in at least a few centimeters, so that the doughnuts can float freely.
  • Fry the doughnuts on both sides until golden brown – check with a toothpick if they are ready (if the toothpick is sticky after inserting it into a doughnut, they need to fry a little longer).

  • Drain the finished doughnuts on a paper towel.
  • Transfer the cream to a piping bag with a nozzle and fill the still warm doughnuts with it.

  • You can additionally sprinkle the doughnuts with powdered sugar, or make a simple glaze.

Chocolate pudding doughnuts – tips

For the upcoming Fat Thursday, I recommend delicious homemade filled doughnuts.

I know it’s much easier to buy a doughnut at a bakery, but a homemade doughnut tastes extraordinary. Especially since you can make it with your favorite filling inside :)

What is your favorite doughnut filling?

I personally really like doughnuts with pudding or with advocaat cream :) And when I was young and still in high school, I absolutely devoured poppy seed doughnuts. Recipes for poppy seed doughnuts and vanilla cream doughnuts can be found on my blog, and I highly recommend you try them.

Today, however, I have delicious homemade chocolate cream doughnuts with a hint of coffee :)

How to make cream-filled donuts?

We start making doughnuts by preparing a simple yeast dough. It’s best to knead the dough for doughnuts with a mixer so you’re not tempted to add too much flour. Also, when cutting out the doughnuts, it’s best to use only a little flour. There’s no need to add a lot, as the doughnuts will lose their fluffiness and lightness. I filled my doughnuts with cream after frying. That’s why I placed the dough circles cut with a mold on a tray and covered them with a cloth to let them rise and puff up. Then I carefully removed them from the baking paper and transferred them to a pot with hot oil.

How to fry doughnuts?

It’s best not to fry too many doughnuts at once, as they need space to rise and float. I suggest frying a maximum of 3-4 doughnuts at a time – depending on how wide your pot is. Fry the doughnuts until golden brown on both sides. How to check if the doughnuts are cooked through? I insert a toothpick into the center of the doughnut – if there’s no wet dough on the toothpick when removed, it means the doughnut is cooked. Be sure to drain the finished doughnuts on a paper towel to remove excess fat.

How to fill doughnuts?

I fill the doughnuts when they are still warm. Simply transfer the prepared cream into a piping bag with a pastry tip (it can be a tip with a larger hole, or even a star tip – I used one like that). How to make cream for filling doughnuts?

I prepared a chocolate-coffee cream with a hint of espresso. The coffee added a nice flavor to the cream but didn’t overpower it. If you’re not keen on coffee, use more milk instead. The cream itself is essentially more like pudding, but made from scratch. I used very little sugar, so I added chopped milk chocolate. I used half a bar of chocolate, but you can easily use more – especially if you want a sweeter filling. You can also use dark chocolate for a more intense flavor.

You can additionally sprinkle the pudding doughnuts with powdered sugar at the end, or drizzle them with icing. How to make icing for donuts? You can make icing for doughnuts very simply – just mix about a cup of powdered sugar with 2-3 tablespoons of milk until it reaches a slightly liquid consistency. Drizzle the doughnuts with the prepared icing. The doughnuts must be cooled before drizzling with icing, otherwise almost all the icing will run off them :)

How many calories does a doughnut have?

From this recipe, I got 9 sizable doughnuts, and with that many doughnuts, each one had roughly 290 calories – although I’m not entirely sure how much “oil” they absorbed, as I forgot to check how much there was at the beginning and end of frying. So this is an approximate number, which can be rounded to 300 kcal per doughnut. But who counts calories on Fat Thursday? These calories don’t count at all :)
