Cinnamon Roll Recipe

- 125 ml milk (lukewarm)
- 1 teaspoon sugar (for yeast)
- 300 g wheat flour – all-purpose (I used type 500 – 2 cups)
- 50 g sugar (1/4 cup)
- 1 egg (size L)
- 40 g butter

- 100 g sugar (I used cane sugar – 1/2 cup)
- 1.5 tablespoons cinnamon

- 75 g powdered sugar
- 1 tablespoon vanilla extract

How to make cinnamon rolls with cream cheese glaze
- Mix the yeast with sugar and lukewarm milk – stir until dissolved, cover and set aside in a warm place for about 20 minutes – so that the yeast starts to “work”.15 g yeast, 125 ml milk, 1 teaspoon sugar
- In a mixer bowl, place flour, egg, butter in pieces, and sugar. Add the risen yeast and knead into a smooth dough.300 g wheat flour – all-purpose, 50 g sugar, 1 egg, 40 g butter
- Cover the bowl with the dough and set aside in a warm place for an hour, so it can rise.
- Place the risen dough on a lightly floured surface and knead briefly.
- Roll out the dough into a rectangle approximately 30/40 cm in size – about 0.5-1cm thick.
- Brush the top of the dough with butter.approx 50 g butter
- Mix sugar with cinnamon.100 g sugar, 1.5 tablespoons cinnamon
- Sprinkle the butter with the mixture.
- Roll up the dough into a log along the longer side.
- Cut the dough into 8 roughly equal slices.
- Arrange the cinnamon rolls in a baking dish (I greased mine with butter and dusted with flour). Cover the dish with the cinnamon rolls and set aside for about 30 minutes, so that the rolls puff up.
- Meanwhile, preheat the oven to 180 degrees Celsius (top/bottom heat).
- Bake the risen cinnamon rolls for about 20 minutes – until golden brown.
- Transfer the cream cheese to a bowl, add sugar and vanilla, and blend briefly – until a smooth cream is obtained.100 g cream cheese, 75 g powdered sugar, 1 tablespoon vanilla extract
- Glaze the still warm rolls with the icing.

Yeast buns with cinnamon – notes
I recently craved yeast buns and baked us these appetizing cinnamon rolls, sticky with cream cheese frosting. Such buns are very popular yeast pastries in American cuisine (and beyond). I went directly to the source here and used a recipe from an American website. The only thing is, I prepared these buns from a smaller portion because I don’t have that many people eager to eat sweets.
The cinnamon rolls turned out amazing! Wonderfully fluffy, aromatic, and sweet from brown sugar and cinnamon. Such a cinnamon roll is a perfect addition to a cup of coffee or tea – both for dessert and for a sweet breakfast. You must try it!

What ingredients are needed to make cinnamon rolls?
For the buns, you only need very basic ingredients, generally available in every store – even a small, local one. Below is a short list of basic ingredients and possible substitutes.
- yeast – as usual, I used fresh yeast because I like working with it. If you don’t have fresh, but only dried, use one packet – about 7g.
- flour – plain wheat flour, type 450 or 500 can be used
- sugar – for the yeast dough itself, I added regular granulated sugar, but for the filling, I chose brown sugar due to its light caramel color and slightly better taste, but if you don’t have it, regular sugar will be perfectly fine
- cream cheese – for preparing the cream cheese frosting, I used light cream cheese – I bought mine at Biedronka (Delikate), but it can also be, for example, Bieluch, Philadelphia, Piątnica Mój Smak, or Almette śmietankowy.

How to make cinnamon rolls – tips
I recommend kneading the yeast dough for cinnamon rolls with a mixer – then it will definitely be well-kneaded and you won’t be tempted to add more flour or milk. For the yeast buns to be nicely fluffy, it’s worth dedicating some time to proper proofing of the dough. First, let the yeast starter rise – if nothing happens to it after several minutes – it doesn’t thicken, doesn’t rise, no thick foam forms, it means you need to prepare a new batch. Either the milk for the starter was too warm and “killed” the yeast, or the yeast was too old. If it’s too cold at home or there are drafts, it’s worth putting the dough in the oven – you can additionally heat it to 30 degrees Celsius, then the dough will rise faster.

How to cut yeast dough into buns?
To cut the yeast dough roll into nice buns, use a sharp knife – you can additionally lightly dust it with flour so that the sticky yeast dough doesn’t stick to it.
The second method is to use a thread (like for sewing) to divide the dough into buns – dental floss also works well because it’s stiff and doesn’t break – just pass the thread under the dough and tighten the ends by pulling them in opposite directions – this creates nice and even buns.
It’s also worth leaving the already cut buns for about 30 minutes to lightly rise and puff up – then the buns will be super fluffy and light.
Immediately after baking, let the cinnamon rolls cool for 5 minutes, and during this time, prepare the cream cheese frosting. Frost the still slightly warm cinnamon rolls so that the frosting melts slightly and “coats” the buns more thoroughly.
