How to make egg yolk cake with raspberries
Beat the egg yolks with sugar until they are white and very fluffy.
6 egg yolks,
200 g sugar
Sift the flour through a sieve together with the baking powder.
225 g wheat flour - all-purpose,
2 teaspoons baking powder
To the beaten egg yolks, add half of the flour, milk, and juice or extract, and mix briefly.
120 ml milk,
1 tablespoon lemon juice
Add the rest of the flour and mix briefly - just until combined.
Transfer the batter to a springform pan and arrange the fruits on top.
approx. 100 g raspberries
Bake at 170 degrees (fan-assisted) for approximately 30-40 minutes - until a dry skewer comes out clean.
After baking, cool - before serving, sprinkle the cake with powdered sugar.
