Recipe for a simple creamed cake made only from egg yolks
If you don’t know what to do with egg yolks after making meringue, or after other baked goods, then I have the perfect recipe for you – prepare cake with egg yolks and raspberries or with other fruits. For this cake, we use only egg yolks, no whites. The cake turns out nicely fluffy and tastes wonderful with added fruits. If you have some egg yolks to use up and don’t know what to do with them, then be sure to bake this cake!

Egg Yolk Cake with Raspberries Recipe

- 6 egg yolks (mine are from size L eggs)
- 200 g sugar (- 1 cup)
- 1 tablespoon lemon juice (or a little lemon extract or other flavor)
- 225 g wheat flour – all-purpose (- 1.5 cups – preferably type 450 or 500)
- 2 teaspoons baking powder
- 120 ml milk (- 1/2 cup)
- approx. 100 g raspberries (or other small fruits)

How to make egg yolk cake with raspberries
- Beat the egg yolks with sugar until they are white and very fluffy.6 egg yolks, 200 g sugar
- Sift the flour through a sieve together with the baking powder.225 g wheat flour – all-purpose, 2 teaspoons baking powder
- To the beaten egg yolks, add half of the flour, milk, and juice or extract, and mix briefly.120 ml milk, 1 tablespoon lemon juice
- Add the rest of the flour and mix briefly – just until combined.
- Transfer the batter to a springform pan and arrange the fruits on top.approx. 100 g raspberries
- Bake at 170 degrees (fan-assisted) for approximately 30-40 minutes – until a dry skewer comes out clean.
- After baking, cool – before serving, sprinkle the cake with powdered sugar.

Fluffy cake made only from egg yolks – notes
I recently made meringue and again had egg yolks left over.
And since I don’t like to waste food, I made a cake with egg yolks and raspberries.
For my cake, I used 6 egg yolks, which I mixed with sugar like kogel mogel (egg yolk dessert).
To prevent the cake from being too dry, I added a little milk and before baking, I added raspberries.
I used frozen fruits and did not thaw them beforehand.
For flavor, I flavored the cake with lemon juice and added a little lemon zest.
Instead of juice, you can use food flavoring – also in a different flavor.
The egg yolk cake turned out very fluffy and delicious.

How to store egg yolk cake?
You can store the cake directly on the counter for a few days – place it in an airtight container, or cover it with a glass or plastic lid.
At my place, the leftover cake lasted from Thursday to Monday and tasted great!
If you want the cake to last longer, due to the added fruits, you can store it in the refrigerator – especially if you make it on hotter days. Then fruits have a greater tendency to spoil.
Egg yolk cake is also suitable for freezing. Wrap it tightly in cling film and freeze. It can safely stay in the freezer for 2-3 months.
