  • 2 egg whites (from size L eggs)
  • 2 egg yolks
  • 100 g sugar (half a glass)
  • 70 g wheat flour – all-purpose (1/3 cup)
  • 1 tablespoon bitter cocoa

  • 1 package cherry jelly
  • 400 ml water (boiling)
  • approx 450 g cherries

ingredients for chocolate cream

  • 500 g mascarpone cheese
  • 100 g Nutella
  • 100 g chocolate (dark or milk – melted and cooled)

ingredients for whipped cream

  • 500 ml heavy cream (well chilled)
  • approx 50 g powdered sugar (2-3 slightly heaped tablespoons or to taste)
  • 2 teaspoons gelatin (+ a little cold water)

Step 1 – preparing the chocolate sponge cake

  • Sift the flour and bitter cocoa through a sieve.
    70 g wheat flour – all-purpose, 1 tablespoon bitter cocoa
  • Mix the egg whites with sugar into a thick, white, fluffy mass.

  • Add the yolks to the whites and gently mix or blend on low speed – mix briefly, just until combined.

  • Pour in the sifted flour with cocoa and gently mix – just until combined.

  • Pour the sponge cake batter into the prepared pan and spread an even layer over the entire bottom.

  • Place the pan with the sponge cake in an oven preheated to 170 degrees (convection mode) and bake for about 10-12 minutes.
  • After baking, cool the sponge cake, then gently peel it off the baking paper.

Step 2 – preparing cherries in jelly

  • Dissolve the cherry jelly in boiling water.
    1 package cherry jelly, 400 ml water
  • Add cherries to it (if using frozen, do not thaw them beforehand).

  • Set the cherries aside in a cool place to start setting.
  • Spread the already setting and thicker cherries over the chocolate sponge cake (which should be placed back in the baking pan lined with baking paper).

  • Put the pan with the cake and cherries in the refrigerator so that the jelly sets completely.

Step 3 – preparing the chocolate cream

  • Transfer mascarpone cheese and Nutella to a bowl, add melted and cooled chocolate.

  • Blend the ingredients together into a smooth cream.

  • Spread the cream over the cherry layer and smooth the surface.

  • Put the cake back in the refrigerator.

Step 4 – preparing whipped cream for the cake

  • Pour a little cold water over the gelatin – just enough to cover the powder well, and set aside for about 5 minutes to swell.

  • Meanwhile, whip the cold heavy cream together with powdered sugar into a thick whipped cream.

  • Briefly heat the gelatin until it becomes liquid (if you don’t know how, read my tips below the recipe), add a tablespoon of whipped cream to it and mix thoroughly.

  • Pour the gelatin into the rest of the whipped cream and mix vigorously or blend.

  • Spread the whipped cream over the cake and put the whole thing back in the refrigerator for at least an hour.

  • Before serving, decorate the top of the cake with chocolate sprinkles or grated chocolate.

What is Black Forest Cake?

My creamy cherry cake today is inspired by the famous German Black Forest Gateau, also known as Black Forest Cake. This torte consists of a chocolate sponge cake layered with cherries and cream. This combination of flavors is so delicious that the torte is extremely popular and used to create other recipes. On my blog, you will find not only the recipe for this torte but also a recipe for Black Forest cheesecake – where I prepared a chocolate cheesecake with cherry fruit filling and whipped cream. The cheesecake is exquisite, and I recommend it wholeheartedly!

Black Forest Cake is a light and thin chocolate sponge cake, on which I spread cherry jelly with cherries. The next layer is a light mascarpone cream prepared with sweet, slightly nutty Nutella and melted chocolate. Finally, the cake is decorated with a layer of whipped cream with a delicate creamy taste. Served cold, the whole thing tastes wonderful and looks great. You must try it!

Ingredients necessary for preparing Black Forest Cake and substitutes

To prepare this cake, you will need a few basic ingredients. Below is a condensed list of the products I used and possible substitutes.

  • cherries – you can use fresh, frozen, or compote cherries – remember to remove the pits! If you use frozen cherries, you don’t need to thaw them beforehand – such frozen cherries will cool down faster and help the cherry jelly set
  • cocoa – for the sponge cake, you will need bitter cocoa – it can be regular or defatted. Drinking cocoa powder is not suitable here!
  • mascarpone cheese – you can easily buy this cheese in larger stores or discount supermarkets – it is always available at Biedronka and Lidl
  • chocolate – I used dark chocolate for my cream because I prefer less sweet cakes; if you prefer sweet baked goods, choose milk chocolate
  • Nutella – you can substitute it with another chocolate-nut spread – I used 100 g here, which was 2 very heaped tablespoons; you can use more cream if you want a sweeter taste
  • whipping cream – for the whipped cream, I used liquid cream in a carton, with 30% fat content. You can also use 36% cream – then the cake’s calorie content will slightly increase.
  • gelatin – I used powdered gelatin, you can also use leaf gelatin – my gelatin weighed about 7 g

How to make Black Forest Cake – tips

This chocolate cherry cake is not difficult to prepare, but it requires a bit of time – especially for each layer to set. Therefore, it’s best to divide the work into stages. You can bake the sponge cake a day or two in advance and store it tightly wrapped in cling film. You can also prepare the cherries in jelly beforehand, as it will probably take 2-3 hours for them to set properly. Once you have the sponge cake ready and the jelly setting, the rest of the work will proceed quickly.

What chocolate sponge cake for the cake?

I prepared a very basic chocolate sponge cake with two eggs here. You can use my recipe or your favorite recipe. If you are looking for a more sophisticated chocolate sponge cake recipe, you can make a chocolate sponge cake with a touch of butter and coffee. How to melt chocolate for chocolate cream?

Choose your favorite chocolate, break it into pieces, and melt it in a double boiler. And how to melt chocolate in a double boiler? Place a small pot with water poured into the bottom on the stove – add enough water to cover the bottom, about 2 cm high. Place a heat-resistant bowl on top of the pot – metal bowls or heat-resistant glass bowls work best. Put the broken chocolate into the bowl and heat it until it melts from the steam rising from the water below. You can stir the chocolate during this process to make it melt faster. Remove the bowl from the pot and set it aside for a few minutes. Add the cooled chocolate to the mascarpone cheese and Nutella to blend them together into a cream.

How to prepare gelatin for whipped cream?

For gelatin to work properly, it should be covered with cold water – cold milk can also be used. I add just enough liquid to cover the gelatin and stir with a spoon. I set aside the glass with gelatin for a few minutes. During this time, the gelatin swells and thickens. Once it’s thick, it needs to be heated to become liquid. A microwave works best for me here. I put the glass in and set the time for 10 seconds. I watch through the door – when the gelatin starts to rise in the glass, it means it’s ready. Then I take it out and stir. To prevent the gelatin from forming lumps in the cream when added, it needs to be tempered. Just add 1-2 tablespoons of cream to the glass with gelatin and mix. Only then do I add this tempered gelatin to the rest of the cream and mix vigorously or blend.

How to heat gelatin if you don’t have a microwave? You can place the glass with gelatin in a pot of hot water and stir until it dissolves. You can also heat it in a double boiler – similar to how I described the process of melting chocolate in a double boiler.

Cherry cake as an alternative to cherry cake

During fresh cherry season, you can substitute them for sour cherries. Dark, intensely red sweet cherries will work particularly well here. They are sweeter than sour cherries, so keep that in mind when preparing the chocolate cream later – it might be worth using dark chocolate ;)

How to store chocolate cherry cake?

This creamy cherry cake, due to the whipped cream, is best stored in the refrigerator. It is ready to serve immediately after taking it out of the refrigerator and does not require additional heating. The cake can safely stay in the refrigerator for several days. Due to the whipped cream, the cake is not very suitable for freezing. Therefore, it is best to eat it after preparation.
