How to make crunchy vegan granola
Add oats, salt, and cinnamon to a large bowl.
240 g oat flakes, 0.5 teaspoon salt, 0.5 teaspoon cinnamon
Pour in lightly chopped nuts and seeds - mix with a spatula.
approx. 50 g nuts, approx. 35 g pumpkin seeds
Add melted coconut oil and maple syrup and mix very thoroughly.
50 g coconut oil, 70 g maple syrup
Line a large baking sheet from the oven with parchment paper.
Spread the flakes and lightly press them down with a spatula into an even layer.
Bake in an oven preheated to 180 degrees Celsius (top/bottom heat) for about 20 minutes (until lightly golden)
After about 10 minutes, stir the flakes and lightly press them down again with a spatula.
After baking, remove the baking sheet from the oven and set aside for at least 45 minutes to allow the mixture to cool - do not stir them during this time!
Add dried fruits to the cooled flakes - cut larger ones into smaller pieces.
approx. 50 g raisins
Transfer the granola to an airtight container.
