I made myself vegan granola with pecans and walnuts, and pumpkin seeds. Add a bit of sweet raisins and a delicious, balanced meal is ready at any time. You must try it!

If you like to eat cereal with dried fruit and nuts for breakfast, then you absolutely must make this homemade granola.

- 240 g oat flakes (- 2 cups)
- approx. 50 g nuts (I used walnuts and pecans – 0.5 cup)
- approx. 35 g pumpkin seeds (or sunflower seeds (shelled) 1/4 cup)
- 0.5 teaspoon salt
- 0.5 teaspoon cinnamon
- 50 g coconut oil (- 1/4 cup)
- 70 g maple syrup (- 1/4 cup)
- approx. 50 g raisins (or other dried fruits – 0.5 cup)

How to make crunchy vegan granola
- Add oats, salt, and cinnamon to a large bowl.240 g oat flakes, 0.5 teaspoon salt, 0.5 teaspoon cinnamon
- Pour in lightly chopped nuts and seeds – mix with a spatula.approx. 50 g nuts, approx. 35 g pumpkin seeds
- Add melted coconut oil and maple syrup and mix very thoroughly.50 g coconut oil, 70 g maple syrup
- Line a large baking sheet from the oven with parchment paper.
- Spread the flakes and lightly press them down with a spatula into an even layer.
- Bake in an oven preheated to 180 degrees Celsius (top/bottom heat) for about 20 minutes (until lightly golden)
- After about 10 minutes, stir the flakes and lightly press them down again with a spatula.
- After baking, remove the baking sheet from the oven and set aside for at least 45 minutes to allow the mixture to cool – do not stir them during this time!
- Add dried fruits to the cooled flakes – cut larger ones into smaller pieces.approx. 50 g raisins
- Transfer the granola to an airtight container.

Vegan granola with nuts – notes
It’s been a long time since there was a new granola recipe on the blog, so I decided to make amends and share a delicious new recipe. I recently spotted this crunchy granola at Kate’s and it tasted so good that I’m recommending it here now.
Until now, I hadn’t made granola with fat because I was afraid of the extra calories, but it turns out that these aren’t values worth worrying about.
Remember that you can add your favorite toppings and whatever you currently have at home to granola. So its final taste largely depends on you! Here, I focused on very basic ingredients generally available in every home or store. See my notes below regarding possible substitutes.

What ingredients are needed to make granola?
I prepared my granola using the ingredients below, but you can substitute them with others.
- oat flakes – I recommend using whole-grain rolled oats here; they will be healthier and provide energy for a longer time. If you want gluten-free granola, swap them for gluten-free oat flakes (affiliate link), or use other gluten-free flakes, e.g., millet.
- nuts – I used walnuts and pecans here, but you can substitute them with any other nuts or almonds
- coconut oil – for granola to be nicely crunchy, you need to add some fat to it; I chose coconut oil (affiliate link), but if you don’t have it, you can use oil or olive oil
- maple syrup – I added syrup for a slightly sweet taste and also for crispiness; instead of maple syrup, you can also use agave syrup, or honey (in which case the granola will no longer be suitable for vegans!)
- dried fruit – I only had raisins at home, so I added them, but you can use dried plums, apricots, cranberries, or other favorite fruits here
Remember not to add dried fruit before baking, as they can become bitter! Add them after the granola has been baked and cooled.

How to make granola crunchy?
To make granola crunchy after baking, it’s worth paying attention to a few elements.
Firstly – fat and a liquid “sweetener” are essential – they coat the flakes and nuts, and add crispiness during baking.
Secondly – the flakes should be stirred during baking and then lightly pressed again – so that they stick together into larger clusters.
Thirdly – do not stir the hot baked granola; instead, leave it to cool completely. Only then gently stir it, breaking it into smaller pieces.
To keep granola crunchy, it should also be stored properly. It’s best to transfer it to an airtight container so it doesn’t absorb moisture from the air.
You can store granola prepared this way for about 2 weeks.

How many calories does granola with nuts have?
My granola with walnuts, pecans, pumpkin seeds, and raisins, at the exact weight given, had about 453 calories per 100 grams. For a breakfast portion, I usually use about 30g of granola, which is about 150 calories.
The final calorie count depends on what ingredients you add to your granola and how much exactly. Remember that nuts, despite being very healthy, are also very high in calories! The same applies to dried fruits – they contain a lot of sugar. Therefore, add them carefully and preferably in recommended amounts.

How to eat granola?
I love serving my granola with thick Greek yogurt and fresh fruit. I usually use about 150g of yogurt, 30g of granola, and fruit. During blueberry season, I love granola with blueberries. It also tastes great with sliced banana, pear, or lightly stewed apple.
For vegans, replace Greek yogurt with plant-based yogurt – e.g., coconut.
You can also serve granola with milk, but then it might soak it up and lose its crunchiness – but it will certainly still be very tasty.
