How to make shortcrust pastry with blueberries and crumble
Step 1 - prepare the baking pan
Line the baking pan with parchment paper.
Step 2 - prepare the quick shortcrust pastry
Put the flour, baking powder, sugar, butter (in pieces) and egg into a bowl and knead the dough - mine had more of a crumble consistency.
375 g wheat flour - all-purpose,
1 teaspoon baking powder,
100 g sugar,
200 g butter,
1 egg
Sprinkle about 2/3 of the dough into the pan and carefully press it into the entire bottom.
Pre-bake the base in an oven preheated to 180 degrees Celsius (top/bottom heat mode) for 15 minutes.
Step 3 - prepare the blueberry filling
Meanwhile, mix the blueberries with potato starch and sugar.
500 g blueberries,
1 tablespoon potato starch,
2 tablespoons sugar
Sprinkle the blueberries onto the pre-baked base.
Sprinkle the remaining dough over the fruit.
Step 4 - bake the quick blueberry and crumble cake
Bake the cake for another 40 minutes at 180 degrees Celsius (top/bottom heat).
After baking, let it cool slightly and you can serve it warm with a scoop of ice cream :)
