I prepared it using a food processor, and it only took me a moment! To make this cake, you only need very basic ingredients. So buy fresh blueberries and make this delicious cake!

  • 375 g wheat flour – all-purpose (- 2.5 cups)
  • 1 teaspoon baking powder
  • 100 g sugar (- 0.5 cups)
  • 200 g butter (- I used cold)
  • 1 egg (- I used size L)

  • 1 tablespoon potato starch (- 20 g for me)
  • 2 tablespoons sugar (- 30 g)

How to make shortcrust pastry with blueberries and crumble

    Step 1 – prepare the baking pan

    • Line the baking pan with parchment paper.

    Step 2 – prepare the quick shortcrust pastry

    • Put the flour, baking powder, sugar, butter (in pieces) and egg into a bowl and knead the dough – mine had more of a crumble consistency.
      375 g wheat flour – all-purpose, 1 teaspoon baking powder, 100 g sugar, 200 g butter, 1 egg

    • Sprinkle about 2/3 of the dough into the pan and carefully press it into the entire bottom.

    • Pre-bake the base in an oven preheated to 180 degrees Celsius (top/bottom heat mode) for 15 minutes.

    Step 3 – prepare the blueberry filling

    • Meanwhile, mix the blueberries with potato starch and sugar.

    • Sprinkle the blueberries onto the pre-baked base.

    • Sprinkle the remaining dough over the fruit.

    Step 4 – bake the quick blueberry and crumble cake

    • Bake the cake for another 40 minutes at 180 degrees Celsius (top/bottom heat).
    • After baking, let it cool slightly and you can serve it warm with a scoop of ice cream :)

    Quick blueberry cake with crumble topping – notes

    Recently, my husband went on a business trip to his company’s headquarters in Gliwice. And since he rarely goes there, I couldn’t let him go empty-handed! I bought delicious fresh blueberries and decided to bake him a cake. Lately, I’ve been a bit busy, so I settled on a very quick and simple cake – I even made a short video to show you how easy the recipe is!

    How to make a quick blueberry cake – tips

    What to do to make shortcrust pastry quickly and without problems? Well – if you have a food processor at home – be sure to use it to prepare the shortcrust pastry. I personally love this method of preparing dough.

    Firstly – I don’t have to get my hands dirty ;)

    Secondly – I don’t overheat the dough – the food processor makes it quickly and the dough doesn’t absorb warmth from my hands. That’s why the dough is already cooler at the very beginning.

    Thirdly – I’m not tempted to add more flour or other ingredients. When kneading by hand, I often tend to add, for example, flour because the dough is sticky. And then it becomes too hard. There’s no need to add too much flour to shortcrust pastry – it’s better to stick to the recipe.

    I stopped mixing the dough, prepared in a food processor from crumbly ingredients, when a crumble topping began to form, and in that form, I poured it into the prepared baking pan and pressed it down. Under the warmth of my hands, the dough nicely came together.

    To prevent the dough from getting soggy from the juicy fruit, I pre-baked it briefly in the oven and only then added the blueberries. Additionally, I added potato starch to the fruit to “bind” the juices released from the fruit under high temperature.

    How to serve shortcrust blueberry cake?

    The cake tastes amazing both warm and cold (you don’t need to store it in the fridge if you eat it within two days). When warm, be sure to serve the cake with a scoop of ice cream. When cold, you can eat it plain or with whipped cream. Everyone will surely be delighted!

    How many calories does such a quick blueberry cake have?

    As I wrote above in the recipe, 100 g of cake made with my ingredients had about 290 kcal. If you divide it into 20 portions, then one piece will have about 190 kcal. This is, of course, the calorie count without ice cream or whipped cream ;)
