How to make sponge cake
Blend the egg whites with sugar into a thick and fluffy white mixture.
2 egg whites,
50 g sugar
Add the egg yolks and mix briefly.

Sift both flours together through a sieve and add to the beaten eggs - mix gently.
50 g wheat flour - all-purpose,
1 tablespoon potato flour
Line the bottom of the baking pan with parchment paper.
Transfer the batter to the pan and bake in a preheated 170 degree (convection) oven for about 10-12 minutes - until a dry skewer comes out clean.
After baking, cool the sponge cake and if you like moister cakes, lightly soak it (e.g., with slightly sweetened water with a little lemon juice).
How to make mascarpone cream with white chocolate
Break the white chocolate into smaller pieces and melt in a double boiler (if you don't know how to do this, read the tips below the recipe).
200 g white chocolate
Transfer the mascarpone cheese to a larger bowl, add the melted chocolate and blend until combined.
500 g mascarpone cheese
Spread the cream over the sponge cake and smooth the surface.
Wash and dry the fruits, and if they are large, cut them into smaller pieces.

Arrange the fruits on the cream.
You can chill the cake in the refrigerator for an hour to make it more refreshing.
