  • 2 egg yolks
  • 50 g sugar (- 1/4 cup)
  • 50 g wheat flour – all-purpose (- 1/3 cup (cake flour for me))
  • 1 tablespoon potato flour

  • 500 g mascarpone cheese
  • 200 g white chocolate

  • approx 500 g fruits (- strawberries for me, but others can be used)

How to make sponge cake

  • Blend the egg whites with sugar into a thick and fluffy white mixture.

  • Sift both flours together through a sieve and add to the beaten eggs – mix gently.

  • Line the bottom of the baking pan with parchment paper.
  • Transfer the batter to the pan and bake in a preheated 170 degree (convection) oven for about 10-12 minutes – until a dry skewer comes out clean.

  • After baking, cool the sponge cake and if you like moister cakes, lightly soak it (e.g., with slightly sweetened water with a little lemon juice).

How to make mascarpone cream with white chocolate

  • Break the white chocolate into smaller pieces and melt in a double boiler (if you don’t know how to do this, read the tips below the recipe).

  • Transfer the mascarpone cheese to a larger bowl, add the melted chocolate and blend until combined.

  • Spread the cream over the sponge cake and smooth the surface.

  • Wash and dry the fruits, and if they are large, cut them into smaller pieces.

  • You can chill the cake in the refrigerator for an hour to make it more refreshing.

Sponge cake with mascarpone cream – notes

I made today’s mascarpone and strawberry cake before my vacation, but I didn’t have time to write down the recipe. Now I’m quickly making amends, although after returning to the country I realized that the season for delicious Polish strawberries is basically coming to an end. But the recipe itself is so simple and delicious that it will certainly be useful both this year and in future years.

What ingredients for mascarpone cake?

With this recipe, I focused on great simplicity and speed of preparation. That’s why there are only a few ingredients here, but very tasty ones.

The base of the cake is a light and fluffy sponge cake – and here you only need eggs, a little sugar, and a little flour. If you don’t feel like baking a sponge cake, you can use a ready-made sponge cake base or ladyfingers. If you decide on ladyfingers, chill the cake longer in the fridge so that they soften slightly from the cream and are easier to cut.

I made the mascarpone cream with delicious white chocolate, so I didn’t add any sugar to it.

How to melt white chocolate in a bain-marie?

To melt chocolate in a bain-marie, you will need a small pot and a bowl that can be placed on top of the pot without falling in. The bowl should be heat-resistant – for example, metal or made of heatproof glass. Pour some water into the pot and bring it to a boil. Put the broken chocolate into the upper bowl and heat it until it melts – you can stir it occasionally. The bowl should not touch the surface of the water – it should only be heated by steam!

What fruits for mascarpone sponge cake?

For my cake, I used delicious, juicy strawberries. If you don’t have strawberries, use other currently available seasonal fruits – e.g., raspberries, blueberries, or wild berries. Peaches or apricots can also be used – cut them into smaller pieces.

How many calories does mascarpone sponge cake have?

Such a sponge cake with strawberries and mascarpone cream has relatively few calories. 100 g of the cake had about 270 calories for me, and I’ll add that with about 16 servings, each will weigh less than 100 g. Therefore, even people on a reduction diet can eat a piece of this cake.
