  • 150 g powdered sugar (1 cup)
  • 1 egg (size L)
  • 80 ml strong coffee (cooled)
  • 350 g wheat flour – all-purpose (2 and 1/3 cups)

  • 1.5 teaspoons baking powder
  • 160 ml Greek yogurt (preferably at room temp.)

How to make coffee donuts in the oven

  • Cream the butter with powdered sugar until fluffy.

  • Add the egg and a tablespoon of flour mixed with baking soda and baking powder to the mixture – mix briefly until combined.

  • Pour in the coffee and mix briefly.

  • Add about half of the flour and mix on low speed.

  • Add the yogurt and mix briefly.

  • Add the rest of the flour and mix briefly – just until combined. The batter will be thick – if it seems too thick, add a little more yogurt or some milk.

  • Transfer the batter to a thick piping bag and cut off a corner.
  • Grease the donut pan with butter and dust with flour.
  • Using the piping bag, pipe the donut batter into the mold.

  • Bake the coffee donuts in an oven preheated to 180 degrees Celsius (top/bottom heat mode) for about 10 minutes – until a skewer comes out clean.
  • Carefully remove the donuts and place them on a wire rack to cool.
  • Lightly grease the mold again with butter and dust with flour, pipe out the second batch of donuts and bake as before.
  • Dip the cooled donuts in coffee glaze – mix powdered sugar with coffee – add coffee gradually and mix the glaze thoroughly. It should be slightly runny to nicely coat the donuts.

What are baked coffee donuts?

Today I invite you to try these lovely coffee donuts baked in the oven. I found the recipe on the blog Inside Brew Crew Life, but I prepared my slightly modified version. These coffee donuts are very traditional American donuts. They are “meaty” and very “filling”. Just one donut will perfectly satisfy your hunger. Thanks to quick preparation, you can bake them in the morning and eat them for a sweet breakfast. And the addition of coffee will provide you not only with flavor but also energy. You must try them!

Coffee donuts: a combination of tradition and modernity

When I was young, we often made donuts in my family home, but they were always yeast donuts, and therefore their preparation required more time. With access to American recipes, I entered a world of many new recipes. Oponki, or donuts (doughnuts), are very popular sweet baked goods in the United States. Very often prepared in many flavors and with fabulously colorful glazes. These coffee donuts are a combination of tradition and modernity. Baked, not deep-fried, and with coffee and coffee glaze.

Baked not fried: why choose oven-baked donuts?

Why bake donuts instead of frying them? Primarily because of their calorie content. Donuts baked in the oven have fewer calories. Those deep-fried always absorb extra fat during frying, making them more caloric than oven-baked donuts. Moreover, not every donut can be fried. Those with a lighter and fluffier dough cannot be fried because they require a mold to maintain their shape. Therefore, I highly recommend buying a donut baking mold – ideally for fairly large donuts, as this will make donut preparation quicker and more efficient.

Ingredients needed to prepare coffee donuts

To prepare these donuts, you will only need basic ingredients that are readily available in any store. Below I list the products I used and possible substitutes. I have been limiting the amount of sugar for a long time, and my coffee donuts were only slightly sweet. However, after being covered with coffee glaze, that sweetness balanced out. If you prefer sweeter baked goods, add more powdered sugar to the donut dough – for example, use 200 g of sugar.

  • coffee – I added 80 ml of strong coffee (1/3 cup) to the donut dough itself. For me, it was 3 teaspoons of instant coffee poured with hot water; for the glaze, I used coffee made from 2 teaspoons of instant coffee. Instead of regular instant coffee, you can also use decaffeinated coffee or Inka coffee if children are going to eat the donuts.
  • yogurt – I used thick Greek yogurt, but you can also use plain natural yogurt; take it out of the fridge earlier to warm up to room temperature – you can ultimately heat it briefly in the microwave.
  • baking soda and baking powder – this is an American recipe, and they often use baking soda. Here there is both baking soda and baking powder. The coffee donut dough is very thick and needs a lot of leavening agents for the donuts to rise nicely and be fluffy. If you don’t have baking soda, use 3 slightly heaped teaspoons of baking powder.
  • sugar – for creamed cakes, I like to use powdered sugar – it mixes better with soft butter, and mixing is much faster. You can, of course, use regular sugar here, but then you will need to mix it with butter for longer. Also, remember that 1 cup of powdered sugar weighs about 150 g, while 1 cup of regular sugar weighs 200 g.

How to prepare coffee donut dough – tips

As I mentioned above, these donuts are made from creamed dough. Therefore, take the butter needed for preparing the coffee donuts out of the fridge in advance so that it warms up and softens. Only then thoroughly mix the butter with sugar – I mix it with powdered sugar for several minutes until it becomes fluffy and light in color. Only then do I start adding the remaining ingredients and mix them briefly, just until combined. It is good for the remaining ingredients to be at room temperature.

The coffee donut dough is thick (as seen in the preparation video), but it squeezes well from a piping bag. If your dough is too thick, add more yogurt or plain milk and mix.

How best to pipe the donut dough? Transfer the dough to a thick piping bag – for example, a freezer bag – and cut off a corner to create an opening with a diameter of about 1-1.5 cm. Pipe the dough into the prepared mold and place the mold with the donuts into the preheated oven. Below you can watch my short video on preparing coffee donuts.

Baking donuts: how to properly set the oven?

At what temperature is it best to bake donuts? Bake the donuts in an oven preheated to 180 degrees Celsius in top/bottom heat mode. You can also bake them with convection, then set the temperature to 170 degrees Celsius. Place the donut mold roughly in the center and bake for about 10 minutes. I check with a toothpick to see if they are ready, and then I take them out of the oven.

Can donuts be baked on a baking sheet lined with paper?

In the case of these donuts, you can bake them without a mold, thanks to the dense and compact dough. Transfer the dough to a piping bag and squeeze it onto a large baking sheet lined with parchment paper. If you want the donuts to have a nicer shape, you can draw circles on the paper beforehand using a glass. This will help you pipe even and regular donuts. Donuts baked on paper will unfortunately be flat on the bottom, but they will still taste great.

Finished donuts: how to properly cool and store them?

It’s best to place the baked donuts on a wire rack (it can be the one from the oven) so they cool properly. Only when completely cooled, dip the donuts in the glaze and also place them back on the rack so that excess glaze drips off (I recommend placing a piece of parchment paper under the rack to avoid dirtying the countertop). Donuts that you won’t eat immediately should be transferred to an airtight container with a lid. This will ensure their freshness for longer.

Variations of the coffee donut recipe

Do you fancy baked donuts but don’t quite like coffee flavors? No problem! Simply replace the coffee used in the recipe with another liquid. This could be milk, plain water, or, for example, orange juice. Then you will give the donuts an orange flavor. If you use milk, you can add an essence to the dough to flavor the donuts – it could be lemon, vanilla, or even almond essence.

How to make the perfect glaze for donuts?

To prepare the glaze for these donuts, I used only two ingredients – powdered sugar and coffee. I wanted the donuts to be fully coated in glaze, so I made it a bit thinner and dipped the donuts in it. After dipping, you can turn them over to coat them completely in glaze, then lift them over the bowl and wait a moment for the excess glaze to drip back into the bowl.

You can also prepare the glaze without coffee. Add milk, water, or fruit juice to the powdered sugar – add liquids in portions until you achieve a good consistency. The glaze should be slightly runny. If you add too much liquid, simply add more powdered sugar.
