- Divide the chilled dough into two portions.
- Roll out thinly into a rectangle about 20/30 cm in size.
- Cut lengthwise in half, then into smaller rectangles – for me, it was 12 rectangles from one portion.

- Firmly seal two opposite corners together and arrange the cookies on a large baking sheet.

Shortbread cookies with plum jam – notes
Today I have some great cookies with plum jam and nuts for you.
Slightly fluffy, delicately sweet, and crunchy from the nuts.
Perfect with autumn hot tea or cocoa :)
I used shortcrust-yeast dough with cinnamon as the base here.
Thanks to the yeast in the dough, the cookies rise gently during baking and are fluffy and softer than typical shortbread cookies.
I added a minimal amount of sugar to the dough, which is why I spread the cookies with sweet and delicious plum jam from Stovit :)
Additionally, I sprinkled the cookies with hazelnuts – if you don’t have them, use others.
The cookies taste best on the day they are baked, but if you store them in an airtight container, they can last for several days.
This recipe yields about 24 large cookies with plum jam and nuts.
