This is a meringue-nut roll, and its base is a light meringue baked in a large pan, which I then rolled with a delicious whipped cream and nut cream. - 3 egg whites (from size L eggs)
- 100 g sugar (- half a glass)
- 1 teaspoon potato starch
- 1 teaspoon lemon juice (or vinegar)
- 1 handful nuts (chopped – I used hazelnuts)

- 250 ml heavy cream (well chilled – I used 30%)
- 2-3 tablespoons nut cream (I used Nutlove Crispy Hazelnut from Allnutrition, peanut butter can also be used – chilled)
additionally
- 50 g chocolate (melted – optional)

How to make meringue for meringue roll
- Lightly whisk the egg whites and gradually add sugar.3 egg whites, 100 g sugar
- Whisk the mixture until the egg whites are white and very thick, and all the sugar has dissolved.
- Add flour and lemon juice to the egg whites and whisk briefly.1 teaspoon potato starch, 1 teaspoon lemon juice
- Line the bottom of the baking pan with parchment paper.
- Spread the meringue in an even layer.
- Sprinkle the top with chopped nuts.1 handful nuts
- Place in an oven preheated to 160 degrees Celsius (top-bottom mode) and bake for about 20 minutes.
- After baking, carefully trim the sides of the meringue from the mold.
- Place a fresh piece of parchment paper on the counter and sprinkle it with powdered sugar.
- Carefully flip the meringue upside down with the baking paper and place it on the new paper.
- Carefully peel off the old paper and leave the meringue to cool.
How to make whipped cream and nut cream for the roll
- Add a little heavy cream to the chilled nut cream or peanut butter and mix thoroughly.2-3 tablespoons nut cream
- Whisk the rest of the cream until it is slightly thick.250 ml heavy cream
- Add the nut cream and whisk together.
- If you are using regular peanut butter, add a little powdered sugar to the cream.
- Spread the cream over the meringue and carefully roll the meringue into a roll, using the baking paper to help.
- Refrigerate the cake for about 2 hours.
- Before serving, drizzle the top of the roll with melted chocolate, making “flourishes”.50 g chocolate

Meringue roll with nuts – notes
As part of preparing holiday baked goods, I baked a meringue roll with a delicious nut cream.
The meringue itself is basically standard, but for an extra touch of flavor I baked it with chopped hazelnuts on top.
The nuts became crispier and even more aromatic during baking.
Unlike regular rolls, here, after baking, we cool the meringue flat, we don’t roll it like a sponge cake.
The meringue cake is so delicate that there’s no problem rolling it when cold.
How to prepare nut cream?
I whipped cold heavy cream until stiff and then briefly mixed it with nut cream.
I used a hazelnut-flavored cream here, Nutlove Crispy Hazelnut from Allnutrition.
I love this cream for its heavenly taste, and it worked perfectly here.
Instead, you can use nut butter, but then add a little sugar to the cream.
My meringue-nut roll tasted exquisite!
To take its photos while it was still daylight, I cut into it right away, and it was harder to slice.
After chilling in the refrigerator for a few hours, the cake sets and slices into nice pieces.
