This sponge cake is layered with mascarpone cream with grated chocolate and diced strawberries. Additionally, there’s a layer of fresh strawberries covered with sweet strawberry jelly. Stracciatella cake with strawberries and jelly step-by-step recipe

- 4 egg whites (from size L eggs)
- 4 egg yolks
- 100 g sugar (0.5 cup)
- 100 g wheat flour – all-purpose (2/3 cup)
- 2 tablespoons potato starch

- 500 g mascarpone cheese (well chilled)
- 250 ml heavy cream (well chilled)
- approx 75 g powdered sugar (0.5 cup – or to taste)
- 100 g chocolate (grated)
- approx 200 g strawberries (chopped)

- approx 350 g strawberries
- 2 packets strawberry jelly
- 800 ml water (boiling)

How to make stracciatella cake with strawberries step by step
Step 1 – prepare the baking pan
- Line the bottom of the baking pan with parchment paper, and leave the sides dry – a springform pan will work best, but a regular one can also be used.
Step 2 – prepare the sponge cake for the cake
- Sift both flours through a sieve.100 g wheat flour – all-purpose, 2 tablespoons potato starch
- Beat the egg whites together with sugar until a thick and fluffy mixture forms – I mix for a few minutes.4 egg whites, 100 g sugar
- Add the egg yolks to the egg whites and gently mix or beat on low speed with a mixer.4 egg yolks
- Add the sifted flours to the bowl and gently mix or beat on low speed.
- Transfer the batter to the prepared pan and level the surface.
Step 3 – baking the sponge cake
- Place the pan with the sponge cake in an oven preheated to 180 degrees Celsius (top/bottom heat mode) or 170 degrees Celsius (convection mode) and bake for about 20 minutes – until a dry skewer comes out clean.
- After baking, cool the sponge cake and then cut it into two layers.
Step 4 – preparing the stracciatella cream
- Wash the strawberries for the stracciatella cream and cut them into smaller cubes.approx 200 g strawberries
- Transfer the mascarpone cheese to a mixing bowl, add powdered sugar and heavy cream – mix together until a thick cream forms.500 g mascarpone cheese, 250 ml heavy cream, approx 75 g powdered sugar
- Add grated chocolate to the mascarpone cream.100 g chocolate
- Add the chopped strawberries and mix together.
Step 5 – assembling the stracciatella cake
- In the baking pan lined with parchment paper, place the bottom layer of the sponge cake.
- You can additionally moisten it slightly – e.g., with sweetened water with a little lemon juice.
- Spread the cream over the sponge cake in an even layer.
- Place the second layer of sponge cake on top of the cream.
Step 6 – prepare strawberries with jelly for the top of the cake.
- Dissolve the jellies in boiling water and set aside to cool completely and thicken slightly (this may take several hours, so you can prepare it in advance).2 packets strawberry jelly, 800 ml water
- Wash the strawberries and cut them into larger pieces, or in halves.approx 350 g strawberries
- Arrange the strawberries on top of the sponge cake.
- Pour the setting (!) jelly over the strawberries.
- Refrigerate the cake until the jelly is completely set.

Stracciatella cake with mascarpone and strawberries
Today I invite you to a delicious summer cake, perfect for warm days. This cake with mascarpone, strawberries, and jelly looks wonderful and tastes even better. Thanks to the light sponge cake cut into two layers and filled with mascarpone cream with grated chocolate and strawberries, the cake tastes wonderful and is refreshing. The layer of strawberries in jelly will appeal to both children and adults. I’ll also add that this cake is very simple to make, and everyone should be able to handle it. For my part, I’ve added preparation photos to the recipe, as well as a short video on how to prepare the cake, to make it even easier. Ingredients and substitutes for preparing stracciatella cake
To prepare the stracciatella cream cake, you will need a few basic ingredients. Below is a condensed list of the products I used and possible substitutes.
- mascarpone cheese – this is a delicious, creamy Italian cheese perfect for preparing desserts. You can easily buy it in larger supermarkets, as well as in Lidl and Biedronka.
- whipping cream – I used 30% fat cream in a carton here, you can also use 36% cream.
- chocolate – I used dark chocolate here because I prefer less sweet cakes; if you prefer them sweeter, you can use milk chocolate.
- strawberries – fresh strawberries will be best for preparing the cake, but if it’s already out of season, you can use frozen strawberries – thaw them beforehand and drain the juice.

How to prepare chocolate for stracciatella cream?
I recommend grating the chocolate on a coarse grater. This way, the chocolate pieces will be nicely delicate. It’s best to keep the chocolate in its packaging while grating, as it warms up very quickly from your hands and starts to melt slightly. If you don’t have a grater, you can chop the chocolate or briefly blend it in a food processor.

How to make stracciatella cake without baking?
If you don’t feel like baking a sponge cake, don’t have time for it, or are afraid to bake it, you can make a no-bake stracciatella cake. In this case, you can either use ladyfingers – arrange one layer of ladyfingers on the bottom of the pan, spread the cream over them, and then arrange another layer of ladyfingers. The second option is to buy a ready-made sponge cake base (buy one with a diameter of about 26-28 cm) – they are usually not very tall – then use it as the base (place it in a round baking pan), spread the cream, and on top of the cream, a layer of ladyfingers, and then strawberries with jelly.

In the table below the recipe, I provided the calorie count of the cake based on the products I used and for a 100g serving. If you cut the cake into the assumed 24 portions, each portion will then have approximately 228 kcal (carbohydrates – 21 g, proteins – 4 g, fats – 14 g). Thanks to the light sponge cake, a large amount of fruit, and fruit jelly, stracciatella cake is among the less caloric ones, so it’s even more worth preparing :)
