Prepare with me today a delicious and light-as-a-cloud caffe latte cake. This cake is a fluffy coffee sponge cake with a light coffee mousse and a layer of whipped cream. Such a coffee cake will be perfect for special occasions, but also for a weekend dessert. I highly recommend it!

- 2 egg whites (from L-sized eggs)
- 2 egg yolks
- 100 g sugar (- half a cup)
- 70 g wheat flour – all-purpose (- half a cup)
- 1 tablespoon unsweetened cocoa

- 120 ml strong coffee (I recommend Caprissimo Fragrante coffee – cooled)
- 250 g mascarpone cheese (cold)
- 250 ml heavy cream (cold, I used 30%)
- 2-3 tablespoons powdered sugar (to taste)
- 3 teaspoons gelatin (powdered)
- water (for gelatin)

- 500 ml heavy cream (cold)
- 2-3 tablespoons powdered sugar (to taste)
- 3 teaspoons gelatin (powdered)
- water (for gelatin)

How to make cocoa sponge cake
- Beat the egg whites with sugar until white and very thick.2 egg whites, 100 g sugar
- Meanwhile, sift the flour together with the unsweetened cocoa through a sieve.70 g wheat flour – all-purpose, 1 tablespoon unsweetened cocoa
- Add the egg yolks one by one to the beaten egg whites and mix each on the lowest speed, or stir with a spatula.2 egg yolks
- Add the flour with cocoa and mix on the lowest speed or gently stir.
- Line the bottom of the baking pan with parchment paper and transfer the batter – level the surface.
- Bake at 170 degrees (fan-assisted) for about 10 minutes – until a dry stick comes out clean.
- After baking, cool the sponge cake, but do not remove it from the pan.
- You can moisten the sponge cake with a little coffee prepared for the coffee mousse (I moistened it).120 ml strong coffee
How to make coffee mousse for the cake
- Blend the cold mascarpone cheese with cold coffee.250 g mascarpone cheese, 120 ml strong coffee
- Cover the gelatin with a little water – just enough to cover it – mix and set aside.3 teaspoons gelatin, water
- Beat the cold heavy cream together with powdered sugar on high speed until thick and fluffy.250 ml heavy cream, 2-3 tablespoons powdered sugar
- Add the mascarpone with coffee to the cream and gently mix with a spatula. If you wish, you can now sweeten the cream with powdered sugar – gently fold it into the cream.
- Heat the gelatin briefly in the microwave – max 10 seconds – add a heaping tablespoon of mousse to it and mix.
- Pour the gelatin with the mousse into the rest of the mousse and mix thoroughly.
- Spread the mousse over the sponge cake and level its surface.
- Place the pan in the refrigerator and prepare the whipped cream for the top of the cake.
How to make whipped cream for caffe latte cake
- Beat the cold heavy cream with powdered sugar until thick and fluffy.500 ml heavy cream, 2-3 tablespoons powdered sugar
- Prepare the gelatin similarly to the coffee mousse.3 teaspoons gelatin, water
- Add a tablespoon of whipped cream to the heated gelatin and mix.
- Pour the gelatin into the rest of the cream and mix thoroughly.
- Spread the whipped cream over the caffe latte cake and place it in the refrigerator to chill – for several hours.
- Before serving, you can sprinkle the top of the cake with instant coffee or grated chocolate.

Light coffee cream cake – notes
I am a great lover of latte coffee with milk foam, and it was from this love that the idea for such a light caffe latte cake was born.
To make my coffee cake resemble delicious coffee, I prepared a simple cocoa sponge cake for it, which I soaked with coffee after baking.
On top of the chocolate sponge cake, I made a light coffee mousse with strong coffee inside.
Prepare half a cup of strong coffee here (you can add a teaspoon of sugar to it) and let it cool.
By the way, I recommend Caprissimo Fragrante coffee from Przyjaciele Kawy (Friends of Coffee).
This coffee is a blend of Brazilian coffee beans (80% Arabica and 20% Robusta).
In its aroma, you can detect the sweetness of peanut butter and chocolate candies :)
This coffee is very aromatic, yet mild and without a sour aftertaste.
It will be perfect for my coffee mousse cake and as a coffee prepared to go with this cake :D

To make the cake fully resemble a layered coffee, be sure to prepare a topping of whipped cream sweetened with a little powdered sugar.
After preparation, store the caffe latte cake in the refrigerator to chill.
Before serving, prepare a cup of your favorite coffee, and sprinkle the cake with instant coffee or grated chocolate.
