No-bake cappuccino cake recipe
Do you like no-bake cakes? Or maybe you don’t feel like turning on the oven, or perhaps your oven went on strike and isn’t baking? Then I have a recipe for you! Today I have a recipe for an amazing no-bake cake served cold. You can prepare this cappuccino cake on ladyfingers in literally no time, and I guarantee it will be delicious and even quite low in calories :) You can prepare this cappuccino ladyfinger cake for the weekend, a carnival party, or a family celebration. If you like delicious coffee cakes and you love it when you don’t have to bake them, then this cake will be perfect for you!

- approx 16 pieces ladyfingers (long – about 160 g)
- 120 ml water (hot)
- 6-7 teaspoons cappuccino (- I used cream-flavored)
- 500 g mascarpone cheese (- well chilled)
- 250 ml heavy cream (- well chilled)
- 3 tablespoons powdered sugar (- or to taste)
- 3 teaspoons gelatin (+ a little water )
- approx 16 pieces biscuits (round )
- bitter cocoa (or coffee for sprinkling)

How to make cappuccino coffee cake
- Start by preparing the coffee – add half a glass of hot water to the cappuccino coffee and mix thoroughly – set aside to cool completely.120 ml water, 6-7 teaspoons cappuccino
- Line the mold with baking paper and arrange the ladyfingers in it.approx 16 pieces ladyfingers
- Lightly soak the ladyfingers with the cooled coffee (don’t use it all, as it will be needed for the cream ;)).
- Blend together mascarpone cheese, heavy cream, and powdered sugar – blend until the mixture is thick.500 g mascarpone cheese, 250 ml heavy cream, 3 tablespoons powdered sugar
- Add the rest of the cooled cappuccino and gently mix.
- Cover the gelatin with a small amount of cold water – just enough to cover the gelatin. Let it sit for a few minutes to swell, then briefly heat it until liquid (I heat it for a maximum of 10 seconds in the microwave).3 teaspoons gelatin
- Add a heaping tablespoon of cream to the heated gelatin to temper it. Mix thoroughly and pour into the rest of the cream. Mix vigorously.
- Transfer the cappuccino cream onto the ladyfingers.
- Arrange the round biscuits on top – gently press them into the cream.approx 16 pieces biscuits
- Refrigerate the cake until set – for about 4 hours.
- Before serving, sprinkle the cake with bitter cocoa or instant coffee powder.bitter cocoa
- Try to cut pieces the size of a round biscuit :)

No-bake cappuccino cake – my notes
The carnival season has just begun, so I’m quickly sharing with you a no-bake cake recipe that I made myself for New Year’s Eve.
This cake is amazing because it’s very quick to make and requires no baking.
And that’s because I used ladyfingers for its preparation – for the base of the cappuccino coffee cake, I used elongated ladyfingers – like those for tiramisu. And on top, I arranged traditional round sponge fingers, which also serve as a guide for cutting slices. We cut the cake so that the sponge finger on top is entirely on a portion of the cake.
Ladyfingers for tiramisu are a bit harder and crunchier than round sponge fingers, so you can lightly soak them before applying the coffee cream. If you wish, you can also prepare a cappuccino cake on a sponge base – just bake a thin sponge cake instead of using ladyfingers. For this baking pan, I suggest baking a sponge cake from two eggs. You can watch my short video below, where I prepare such a sponge cake.
I soaked them with previously prepared and cooled cappuccino coffee.

What coffee for cappuccino cake?
I used cream-flavored coffee, but you can, of course, use any flavor here – preferably your favorite. For the cake to be nicely coffee-flavored, you need to use a lot of it – you can even use 7 slightly heaped teaspoons. Pour boiling water over the coffee (half a glass of water), stir, and let it cool. I then dipped a silicone brush in it and gently brushed the tops of the ladyfingers. On these prepared ladyfingers, I spread the cappuccino cream and finally covered them with round sponge fingers.

How to make cappuccino coffee cake – tips
The coffee cream itself is based on a combination of mascarpone cheese and whipping cream. I used 30% cream here, and both it and the cheese were well chilled before I started mixing them. Unchilled whipping cream will not whip up, and if you add unchilled mascarpone cheese to cold cream, the cream may curdle! For better stability, I also added a little gelatin to the coffee cream. Instead, you can also use agar – you can use about 1.5 – 2 teaspoons of it.
To make the cappuccino cake look nice when served, it’s worth sprinkling it with a little bitter cocoa or instant coffee powder. It’s best to sprinkle the cake just before serving so that the cocoa or coffee doesn’t absorb moisture from the refrigerator.
This cappuccino cake is served cold and contains gelatin, so it should be stored in the refrigerator. There’s no need to take it out earlier to warm up. Although it’s a coffee cake, I enjoyed it best served with an additional coffee. It seems you can never have enough caffeine ;)

Join me today in making a truly delicious cappuccino coffee cake with ladyfingers. Thanks to the ladyfingers, this no-bake coffee cake requires absolutely no oven time. Of course, if you prefer to make your cappuccino cake on a traditional sponge cake base, you certainly can. Simply bake a two-egg sponge cake using the method from my Alpine apple pie recipe. There you will find a detailed description of how to prepare the sponge cake so it turns out perfectly! However, I highly recommend buying ready-made ladyfingers to drastically shorten the preparation time for this cake. Especially since this coffee-infused dessert needs to be chilled in the fridge afterward anyway for the cappuccino cream to set properly :)

Cappuccino coffee contains much less caffeine than regular coffee, so I think even children can enjoy this cake—provided they like the mild coffee flavor.
