  • 3 eggs (size L)
  • 200 g sugar (1 cup)
  • 300 g flour (type 450-500 – 2 cups)
  • 2 teaspoons baking powder
  • 0.5 cup oil
  • 1 cup sparkling wine (if it’s very dry, you can add more sugar)

  • 500 g mascarpone cheese (at room temperature)
  • 200 g butter (soft)
  • 200 g sweetened condensed milk (at room temperature)

How to make champagne cupcakes

  • Whisk the eggs with sugar until they are light, thick, and very fluffy.
    3 eggs, 200 g sugar
  • Sift the flour through a sieve together with the baking powder.
    300 g flour, 2 teaspoons baking powder
  • Pour oil into the whisked eggs and briefly mix on low speed – just until combined.
    0.5 cup oil
  • Add half of the flour and mix on low speed.
  • Pour in the sparkling wine and gently mix.

  • Finally, add the rest of the flour and lightly mix – just until combined.
  • Transfer the batter to cupcake liners.
  • Bake at 170 degrees Celsius (fan mode) for approximately 20 minutes – until a skewer comes out clean. Let cool after baking.

How to make 3M buttercream

  • Transfer the soft butter to a bowl and beat on high speed for approximately 10-12 minutes – until it becomes very light and fluffy.

  • Slowly pour in the condensed milk and mix thoroughly.

  • Add mascarpone cheese to the butter, one tablespoon at a time, and mix thoroughly after each addition.

  • Decorate the tops of the cupcakes with the cream.
  • Finally, sprinkle them with colorful sprinkles.

Instead of buttercream-cream cheese frosting, you can make a simpler whipped cream frosting.
Whisk 500 ml of well-chilled heavy cream with 5-6 tablespoons of powdered sugar. When the cream is thick, add cold mascarpone cheese (250 g) one tablespoon at a time and mix until combined.

Champagne Cupcakes with cream – notes

New Year’s Eve is approaching, so I’ve prepared a sensational recipe for champagne cupcakes with cream for you.

The cupcakes themselves are very light and fluffy – sponge-cake-like.

That’s why you can go wild with a more substantial cream.

I prepared a butter-cream cheese frosting called 3M cream.

It consists of butter, condensed milk (sweetened), and mascarpone.

Its advantage is that it can stand outside for a long time and nothing will happen to it.

So you can place them on the New Year’s Eve table without worrying that the cream will melt.

What to do if the buttercream curdles?

Unfortunately, butter-based creams are quite temperamental and can curdle.

What does that mean? The cream separates and becomes uneven.

It can be saved quite easily.

I place the bowl with the cream over a pot into which I pour some water.

I heat the water on the stove, and as it steams, it warms the bowl with the cream.

The cream warms up, and I keep mixing it.

Usually, after a few minutes, the cream becomes smooth and thick.

Then you can decorate the cupcakes with it.

What instead of buttercream for decorating cupcakes?

If you prefer a lighter cream, you can prepare a cream based on whipping cream and mascarpone cheese.

Just be careful with it so it doesn’t start to “melt”.

Additionally – sugar sprinkles dissolve on contact with whipped cream and color it.

Returning for a moment to the cupcakes – we add a glass of “champagne” to the batter.

It can be any white sparkling wine – if you’re worried about children eating them, there’s no need to worry.

During baking, the alcohol from the wine will evaporate, leaving only a subtle flavor.
