Decorate them with a light cream frosting and fruit, and they will be even tastier. Such cupcakes with cream will also be great as a dessert on a sweet table at a carnival party. - 60 g wheat flour – all-purpose (- a little over 1/3 cup)

- 250 ml heavy cream (30% – well chilled)
- 125 g mascarpone cheese (cold)
- 2 tablespoons powdered sugar (or to taste)

How to make angel food cupcakes with egg whites
- Sift both flours through a sieve.60 g wheat flour – all-purpose, 1 tablespoon potato starch
- Beat the egg whites with powdered sugar until a fluffy and thick mixture forms – a little less than for meringue.6 egg whites, 150 g powdered sugar
- Add the flours and lemon juice to the egg whites.1 tablespoon lemon juice
- Gently mix with a spoon.
- Spoon the batter into the cupcake liners – I filled them almost completely – the cupcakes didn’t rise significantly.
- Bake at 170 degrees (fan-assisted) for approximately 20 minutes – until a dry skewer comes out clean.
- After baking, cool the cupcakes.
How to make creamy whipped cream frosting for cupcakes
- Whip the cold heavy cream with powdered sugar.250 ml heavy cream, 2 tablespoons powdered sugar
- Once it’s slightly thick, add mascarpone one tablespoon at a time and continue to beat.125 g mascarpone cheese
- Beat the mixture for a few more minutes until the cream is thick.
- Spread some raspberry jam on the cupcakes (if using), and then top with the mascarpone cream.raspberry jam

Angel Food Cupcakes – notes
Angel Food Cupcakes, or angel cupcakes with egg whites, are popular American cupcakes. They are made only with egg whites – without yolks and with a small amount of flour. It’s essentially a meringue to which we add flour. Although there isn’t that much flour – not even half a cup. This means the cupcakes have few calories and can be safely eaten by people on a reduction diet. The lower calorie count is also due to the absence of yolks – they add more calories to eggs. Be sure to check out my recipe for egg white cupcakes and bake these delicious cupcakes for your family. After baking, the cupcakes are light and delicate, snow-white inside. Hence the name angel cupcakes.

Can you make gluten-free egg white cupcakes?
Not much wheat flour is added to the cupcakes – about 60 g. If you need to bake gluten-free cupcakes, you can replace the wheat flour with potato flour. Rice flour or tapioca flour can also be used instead. Ground almond flour will also work here – but it will increase the calorie content of the cupcakes – so keep that in mind! If you are on a reduction diet, almond flour will add unnecessary calories to the cupcakes – in that case, it’s better to opt for starchy flours.

How to serve angel cupcakes?
The cupcakes taste great with whipped cream and mascarpone cheese frosting and fruit. I put some homemade raspberry jam under the cream, and blueberries on top of the cream. You can, of course, use a different flavor of jam (or omit it entirely) and other fruits. Outside the fresh fruit season, you can use canned fruits – e.g., peaches or pineapple – just dice them and place them on the cream.

How to store Angel Food Cupcakes?
The cupcakes themselves – without cream and fruit – can be stored directly on the kitchen counter – place them in an airtight container and cover with a lid so they don’t dry out. If they are already decorated with cream, they can also be kept on the counter for a few hours (unless it’s very hot). If the cupcakes are to last longer, it’s worth putting them in the fridge – store them in a container or lightly covered with foil so they don’t absorb refrigerator odors.
From egg whites alone, you can also bake nut and dried fruit cake with egg whites, chocolate cake with egg whites, or coconut cupcakes with egg whites.
