- 6 egg whites (from size L eggs)
- 300 g sugar (1.5 cups)
- 1 teaspoon potato starch
- 1 teaspoon lemon juice (or vinegar)
- approx. 100 g peanut butter
- approx. 50 g peanuts (I used roasted salted – chopped)

- 250 g mascarpone cheese (well chilled)
- 50 g peanut butter
- approx. 30 g powdered sugar (- 2 tablespoons – or to taste)
- 250 ml heavy cream (well chilled)

How to make peanut meringues with peanut butter
- Pour the egg whites into a large bowl and lightly whisk.6 egg whites
- Start adding sugar to them in portions – whisking at high speed.300 g sugar
- Whisk the egg whites with sugar until they become white and thick, and all the sugar dissolves (you won’t feel any sugar crystals).
- Add potato starch to the egg whites and whisk.1 teaspoon potato starch
- Add lemon juice or vinegar and whisk.1 teaspoon lemon juice
- Line a large baking sheet with baking paper (I additionally grease the corners with a little meringue to stick the paper to the sheet).
- Spoon large meringues, leaving slight gaps (I got 12 meringues).
- Heat the peanut butter briefly so that it becomes slightly liquid.approx. 100 g peanut butter
- Spoon a little peanut butter onto the meringues. Gently swirl the butter with the meringue to create “swirls”.
- Finally, lightly sprinkle the meringues with chopped peanuts.approx. 50 g peanuts
- Place the baking sheet with meringues in an oven preheated to 100-110 degrees Celsius in convection mode and bake for about 1.5 hours.
- After baking, cool the meringues completely before spreading them with cream.
How to make peanut cream for meringues
- Briefly whisk mascarpone with peanut butter and powdered sugar.250 g mascarpone cheese, 50 g peanut butter, approx. 30 g powdered sugar
- Add heavy cream to the bowl and whisk everything at high speed until you get a thick and fluffy cream – if the cream is not sweet enough for you, add more powdered sugar and whisk.
- Spoon about a tablespoon of cream onto the meringue – you can also sprinkle the top with chopped nuts.

Nutty meringues with peanut butter – notes
Today I invite you to try very tasty and wonderfully looking peanut butter meringues. Here I combined sweet, crispy meringues with creamy peanut butter and slightly salty chopped peanuts. I also added a light nutty cream and a sweet chocolate decoration. Meringues in this version can be served as a dessert during the day, as well as for special occasions or parties. You must try them!

Ingredients needed to prepare meringues with peanut butter
To prepare nutty meringues, you will need a few basic ingredients, but each of them is easily available in every store, and certainly in discount stores. Below is a short list of ingredients I used.
- egg whites – for me, these are egg whites from size L eggs – mine weighed about 225 g – if you have a kitchen scale, you can weigh your egg whites if you have eggs of a different size.
- sugar – for preparing meringues, fine granulated sugar is best – it dissolves faster, but if you don’t have it, use regular sugar.
- lemon juice or vinegar – a teaspoon of either is enough
- peanut butter and peanuts
- mascarpone cheese – you can easily buy this cheese in Biedronka, Lidl, or other discount stores. The cheese must be cold, so remember to put it in the fridge immediately after purchase – just like whipping cream.
- whipping cream – for the cream, I used liquid whipping cream in a carton with 30% fat content; you can also use 36% cream – then the caloric content of the cream will slightly increase.

Which peanuts to choose for the recipe?
You can use any peanuts (fistaszki) for the meringues; I chose lightly roasted and salted peanuts here because I really like the combination of sweet and salty. Salted peanuts wonderfully emphasize the sweet taste of the meringue. So if you have such peanuts at home, you can certainly use them here – both for sprinkling on the meringues themselves and for decoration.
Which peanut butter is best for meringues?
For preparing meringues, I most recommend creamy peanut butter, but if you don’t have creamy but one with nut pieces, there’s no need to buy new butter, use the one with nut pieces. To drizzle the meringues with butter, I recommend heating it slightly first – I do this in the microwave, so it becomes slightly liquid and easier to use on the meringues.

Meringue preparation: step by step
Preparing meringue is not difficult, although for people who are just starting their baking adventure, it might seem so. I think everyone is able to prepare and bake a perfect meringue, you just need to follow a few tips and tricks.
How to whip egg whites for meringue?
For meringues, it’s best to first lightly whisk the egg whites with a mixer until they start to foam. Then – continuing to whisk – start adding sugar little by little, and after each portion, whisk for a moment so that the sugar combines well. I whisk the egg whites with sugar at high speed until the whites become white and thick. To check if the meringue is done, take a little foam on your finger and rub it with another finger – if you don’t feel sugar crystals, it means you can stop whisking.
How to stabilize meringues?
To stabilize the meringue, add lemon juice or regular vinegar at the end. The acid contained in them strengthens the bonds between the proteins, so the meringue does not collapse during baking. Potato starch, also added at the end of baking, provides the meringue with a thicker, crispy crust, which gives it greater stability.

Preparation of nutty cream
For the nutty cream for my nutty meringues, I used strongly chilled mascarpone cheese, peanut butter, powdered sugar, and strongly chilled whipping cream. When making creams based on whipping cream, it is important to chill the products thoroughly. This ensures quick preparation of the creams and prevents them from curdling during mixing.
First, blend the mascarpone cheese, peanut butter, and powdered sugar into a smooth mass. I only used 2 tablespoons of powdered sugar here – the cream was not overly sweet, but it perfectly balanced the sweet taste of the meringues. Pour the cold whipping cream into this nutty cream and blend together at high speed until you get a fluffy and thick nutty cream.
How to prepare homemade peanut butter?
If you wish, you can make peanut butter yourself at home. Just roast the peanuts in a pan first to bring out their aroma, then blend them well with a food processor or blender – add a little rapeseed oil during the process to make the butter creamier. On the blog, you will find a recipe for homemade chocolate peanut butter – this version of butter would also be excellent for these meringues.

Decorating and serving meringues with peanut butter
How to serve peanut butter meringues? Before serving, I decorated my meringues with nutty cream – I opted for a more natural, rustic look, so I simply applied the cream with a spoon. If you want the nutty meringues to look more elegant, transfer the cream to a piping bag with a nozzle and pipe it onto the meringues.
For additional decoration, I used chocolate chips (available at Biedronka and Lidl), as well as chopped salted peanuts. You can also drizzle the cream with gently warmed peanut butter. You can also drizzle them with caramel sauce – you can make homemade caramel sauce and add a pinch of salt for taste – to create a sweet and salty flavor.
Decorated meringues are best served immediately. Then the meringues are nicely crispy, and you can really feel the difference between the sweet and crispy meringue and the fluffy cream. Of course, meringues with cream can also sit for a while, and nothing will happen to them.

How to store meringues?
This recipe yields a lot of meringues, so there’s a chance you won’t eat them all at once. So how to store them? I recommend storing the cream and meringues separately. Transfer the cream to a lidded container and put it in the fridge – it can stay there for about 3-4 days. Store the meringues themselves in an airtight container with a lid. If they are in a dry room and don’t absorb moisture, they can be stored for a very long time. My nutty meringues (some last pieces) were still in the kitchen a week later. And small meringues baked without additions I store for even several months.
