Eton Mess Cake recipe step by step
If you like simple cakes that look great and taste fantastic at the same time, then you absolutely must prepare this cake inspired by the famous dessert.

- 200 g sugar (1 cup)
- 1 tablespoon vanilla sugar (or vanilla extract)
- 250 g wheat flour – all-purpose (1 and 2/3 cups)
- 2 teaspoons baking powder
- 80 ml rapeseed oil

- 250 g mascarpone cheese (very cold)
- 250 ml heavy cream (well chilled)
- approx 60 g powdered sugar (1/3 cup – or to taste)

- approx 150 g blueberries (or other small fruits)
- small meringues and mini meringues

Step 1 – preparing the cake with oil
- Sift together the wheat flour and baking powder through a sieve.250 g wheat flour – all-purpose, 2 teaspoons baking powder
- Mix together eggs, sugar, and vanilla sugar until a thick and very light mixture is obtained.4 eggs, 200 g sugar, 1 tablespoon vanilla sugar
- Add part of the flour to the beaten eggs and mix briefly.
- Pour in the oil and mix on low speed.80 ml rapeseed oil
- Add the rest of the flour and mix briefly – just until combined.
Step 2 – baking the cake
- Pour the batter into the prepared pan and level the surface.
- Place the cake in an oven preheated to 180 degrees (top-bottom mode) and bake for about 35 minutes – until a dry stick comes out.
- Cool the finished cake.
Step 3 – preparing the cream for the cake
- Transfer the mascarpone cheese, cream, and powdered sugar to a larger bowl.250 g mascarpone cheese, 250 ml heavy cream, approx 60 g powdered sugar
- Mix together on high speed until you get a thick cream.
- Check its sweetness and if needed, add a little more sugar and mix briefly.
Step 4 – decorating the cake
- Spread the whipped cream over the cake and distribute it evenly over the entire surface.
- Wash the strawberries for the cake and remove the stems.approx 400-500 g strawberries
- Cut larger fruits into slices, and smaller strawberries can simply be cut in half or quarters.
- Sprinkle the top of the cream with strawberries.
- Sprinkle the cake with washed blueberries or other small fruits.approx 150 g blueberries
- Finally, sprinkle the cake with meringues – if you have larger meringues, you can lightly crush them.small meringues and mini meringues

What is Eton Mess: a dessert cake with rapeseed oil
Today I invite you to a unique, very simple, and incredibly tasty and beautiful cake inspired by the famous English Eton Mess dessert. This dessert is most often served in glasses, where layers of cream, fresh fruit, and sweet and crispy meringues intertwine. The dessert is called a “mess” because the ingredients are thrown in without much care; meringues are crushed and broken, fruits are mashed. The meringue dessert itself is incredibly simple and delicious, so if you’ve never tried it before, you absolutely must prepare it at home.
As I wrote earlier, my cake is inspired by this dessert, so it contains its basic components – cream, fruit, and meringues. What else? The base of the cake is a light and fluffy rapeseed oil cake – not too tall, as it’s not meant to dominate. I made my Eton Mess with strawberries and blueberries. These fruits are already available in stores, and the contrasting colors of the fruits made the cake look incredibly charming. What ingredients are needed to prepare Eton Mess cake
To prepare this cake, you will need a few basic and essential ingredients. Below is a condensed list of products and possible substitutes.
- rapeseed oil – you will need 80 ml (1/3 cup) of oil to prepare the cake
- vanilla sugar – for a light aroma, I added 1 tablespoon of vanilla sugar to the cake; you can also use vanilla extract or vanilla flavoring. And if you don’t like vanilla, use another flavor – lemon or cream flavor, for example, would be great
- whipping cream – for the cream, I used liquid whipping cream in a carton with 30% fat content; you will need 250 ml of it
- mascarpone cheese – to make the cream more stable, I prepared it with mascarpone cheese. You can easily buy this cheese in discount stores or larger supermarkets. If you don’t like this cheese or can’t find it anywhere, prepare the cream with double the amount of whipping cream. If you want it to be thicker, it’s better to use 36% cream; optionally, you can add cream stabilizer or a little gelatin to the cream to make it stiffer.
- meringues – for sweetness and a crunchy texture, sprinkle the cake with meringues at the end; small meringues will be best – you can buy them, for example, at a bakery, or bake them yourself (see my mini meringue recipe – prepare them without dipping in chocolate); if you can’t find small meringues anywhere, buy larger ones and crush them into smaller pieces

What to replace strawberries with in Eton Mess?
If you don’t have strawberries, or are allergic to them, or simply don’t like them, you can, of course, replace them with other fruits. Fresh raspberries would work great here. Generally, you can use practically all seasonal fruits, changing them depending on the time of year. And what if fresh fruits are hard to come by? You can use canned or compote fruits. For example, use canned peaches and dice them, add pineapple, and you’ll get a tropical version of Eton Mess cake.

The role of rapeseed oil in the Eton Mess recipe
It’s not without reason that I used rapeseed oil in this recipe instead of butter. Due to the cream, the cake should be stored in the refrigerator. Butter cakes harden when chilled in the refrigerator and then need time to warm up and soften. However, a cake made with rapeseed oil will not harden in the refrigerator and will retain its fluffiness. That’s why it’s perfect for eating straight out of the fridge.
Moreover, you can prepare practically any cake with oil instead of butter. This is especially important if you have lactose intolerance or are on a vegan diet. Additionally, rapeseed oil has a neutral, pleasant taste and aroma that will not change the taste of your cake. It is also important to note the health benefits – butter is an animal fat, containing primarily saturated fatty acids. Meanwhile, vegetable fats, including rapeseed oil, contain valuable polyunsaturated fatty acids with opposing effects. They have strong anti-inflammatory properties and protect our heart.
Using rapeseed oil instead of butter in baking will make the cake cheaper, healthier, and retain its traditional taste. Rapeseed oil is convenient to use because it does not need to be melted and cooled, or mixed for a long time; it can simply be easily measured in a glass or kitchen measuring cup. How to make Eton Mess cake with rapeseed oil – tips
Prepare this oil cake very simply and quickly. Just divide the work into stages so that the whole process runs smoothly and efficiently. Start by preparing and baking a light and fluffy oil cake. You can bake this cake in advance and store it wrapped in cling film to prevent it from drying out. Once you have the cake ready and cooled, make a light cream and prepare the fruits – they need to be washed well, dried, and larger pieces cut into smaller ones.

How to get perfectly whipped cream?
For your cream to be perfect and nicely mixed, it is very important to thoroughly and for a long time chill the whipping cream and mascarpone cheese. Therefore, immediately after purchase, put them in the refrigerator for at least several hours. In stores, cream often sits on shelves near refrigerators rather than in the refrigerator itself. It then does not have the right temperature for mixing. Before mixing, it must be very well chilled, otherwise it will not whip into whipped cream at all, or it may even curdle!
Once you have thoroughly chilled products, transfer them to a large bowl and mix on high speed with an electric mixer. Mix for at least several minutes until you get a thick cream that, when scooped with a spoon, will not fall or run off. Only then can you spread the whipped cream onto the cake. Remember that the cake must be completely cooled before applying the cream, otherwise the cream will warm up from it and start to melt!

How many calories does Eton Mess cake have?
In the recipe above, I stated that my cake with cream and fruit has almost 270 kcal per 100g, while when divided into 24 portions, each slice will have approximately 211 kcal (carbohydrates 22g, fat 12g, protein 3g). This is thanks to the light oil cake, but also to the large amount of fresh fruit, which reduces the calorie content of this cake.
