Why is it worth baking this raspberry bundt cake?
I recently felt like having something sweet with coffee, but as usual, I didn’t feel like spending a long time in the kitchen waiting for results. That’s why I decided to bake such a quick bundt cake without a mixer. All you need are two bowls and a spoon, a quick mix of ingredients, and you can already bake the cake. Plus, baking the bundt cake takes about 30 minutes. The cake takes longer to cool than to make! Additionally, the bundt cake tastes great with raspberries and has a delicate pink color. It’s a great cake for coffee, tea, for dessert, and for a quick snack during the day. I highly recommend it!

Ingredients needed for raspberry bundt cake
This raspberry bundt cake with pudding requires only a few basic ingredients that you either already have at home or can easily get in any store. Below is a shortened list of the products I used and possible substitutes.
- raspberry pudding – use pudding powder to prepare pudding with 500 ml of milk. This is usually a 40g or 60g packet if it contains sugar – you can use plain or with sugar – if you use one with sugar, you can add 20g less regular sugar.
- natural yogurt – for me, it’s thick Greek yogurt, but you can also use buttermilk or kefir.
- raspberry syrup – I used a concentrated raspberry syrup from the store – for drinks, you can also use homemade raspberry juice, or you can completely omit this addition if you don’t have it.
- oil – for me, it’s rapeseed oil, but you can use any mild-flavored oil, it can also be melted coconut oil.

Can I use a different pudding?
Of course, you can use any other pudding of your favorite flavor – it can be plain vanilla pudding, but also other fruit, chocolate, caramel pudding, etc. In that case, you can prepare the glaze with just powdered sugar and milk to better match the cake’s flavor.

Can fresh or frozen raspberries be added to the raspberry bundt cake?
Of course! Fresh raspberries will work perfectly. Due to the high density of the batter, it’s best to arrange fresh raspberries on top of the cake. You can also put half of the batter into the mold, layer raspberries on top, and cover with the rest of the batter. You can also use frozen ones, but it’s best not to thaw them beforehand. You can mix them directly into the batter because they won’t fall apart when mixed like fresh fruit.

How to store raspberry bundt cake to keep it fresh?
Store it in an airtight container or covered at room temperature. This will keep it moist for up to 3–5 days. Remember to put the cooled bundt cake into the container.
Can raspberry bundt cake be frozen?
Yes, the bundt cake freezes very well. Simply cut it into portions, wrap it tightly, and freeze for up to several weeks.

Finally, there’s nothing left to do but… turn on the oven and give it a try. This raspberry bundt cake is proof that delicious homemade cake doesn’t have to be complicated or time-consuming. If you like quick, proven recipes, this one should definitely make it into your favorites.
