- 450 g wheat flour – all-purpose (3 cups)

How to make oil cake with strawberries step by step
Step 1 – preparations
- Line the baking pan with parchment paper or grease it with butter and sprinkle with flour.
- Turn on the oven to 180℃ (top/bottom heat mode) or 170℃ (convection).
- Mix the flour with baking powder.450 g wheat flour – all-purpose, 2 teaspoons baking powder
- Wash the strawberries and cut them into smaller pieces – in half or in quarters.approx 800 g strawberries
Step 2 – preparing the batter
- In a large bowl, crack the eggs and add sugar – blend together for a few minutes until the mixture is very fluffy and pale.8 eggs, 300 g sugar
- Add lemon juice to the beaten eggs and blend briefly.2 tablespoons lemon juice
- Add part of the flour and blend briefly.
- Add part of the oil and blend briefly – alternate adding flour and oil until finished.250 ml oil
- Pour the batter into the prepared pan.
- Arrange the strawberries on top of the cake – I also added some blueberries for color.
Step 3 – baking the cake
- Place the pan with the cake into the preheated oven and bake for about 50 minutes – until a dry stick comes out clean.
- After baking, cool the cake and sprinkle with powdered sugar before serving.

Taking advantage of the fact that foreign strawberries can be very attractively priced and already taste like strawberries, I decided to bake a cake with them. I opted for a traditional oil cake, just like my mom and probably my grandma used to make. Such cakes are very easy to prepare, have simple ingredients, and usually yield a substantial baking sheet. It’s a great fruit cake for the whole family. I also recommend it to you because it’s a very versatile cake – great with coffee, for a barbecue, or a picnic. You can pack it for a trip or a long car journey. But it also works well as a second meal at school, university, or work. You must try this recipe!

Ingredients for fluffy oil cake with strawberries and blueberries
As I wrote earlier, this cake requires only a few very basic ingredients that you either already have at home or can easily get in any store.
- oil – for me, it’s rapeseed oil, you can also use any other mild-flavored oil, it can also be melted coconut oil, or melted butter
- lemon juice – you can also use so-called ‘lemon essence’, but it can also be lemon flavoring, or any other flavor you like – e.g., vanilla
- fruit – use about 800 to 1000 g of fruit – for me, it’s fresh strawberries and some blueberries, which nicely contrasted with the red color of the strawberries, you can also use other available fruits – cut larger ones into smaller pieces. Raspberries, blueberries, plums, or apples will work great here. It’s a very versatile fruit cake.
Can frozen strawberries and blueberries be used?
Yes, but it’s best to add them without thawing – you can also lightly dust them with flour. This prevents the fruit from sinking to the bottom and releasing too much juice.

How to store fruit cake?
After the strawberry cake has completely cooled, it’s worth covering it tightly or transferring it to a container with a lid. If it’s not too hot and humid at home, the cake can last about 3 days at room temperature. If you want it to stay fresh longer, it’s worth putting it in the refrigerator, as fresh fruit in the cake can tend to spoil the cake faster.

Is oil cake suitable for freezing?
Yes, the cake can be frozen (without additions like powdered sugar). After thawing, it is still soft and tasty. The cake can be frozen for about 3 months.

How many calories does oil cake with strawberries have?
In the table below the recipe, I provided the calorie count for 100 g of cake prepared with 800 g of fruit. If you divide the cake into 24 roughly similar pieces, each will have approximately 237 kcal (carbohydrates – 29 g, proteins – 4.5 g, fats – 11.7 g).
