Recipe for honey cupcakes with 3M cream
For special occasions, I recommend honey cupcakes decorated with the so-called 3M cream. The cupcakes themselves are nice, fluffy, and slightly moist, with a light honey flavor. The 3M cream I used to decorate them is a combination of butter, mascarpone, and condensed milk. Decorate the cupcakes using various piping tips, and they will surely look spectacular!

How to make honey cupcakes
- Cream the butter with sugar until light and fluffy – for a few minutes.100 g butter, 150 g powdered sugar
- Meanwhile, sift the flour with baking powder through a sieve.225 g wheat flour – all-purpose, 2 teaspoons baking powder
- Add honey to the butter mixture and mix briefly.80 g honey
- Add one egg at a time and a tablespoon of flour – mix until combined.2 eggs
- Add roughly half of the remaining flour and mix briefly.
- Add buttermilk and the rest of the flour – mix briefly – just until combined.120 g buttermilk
- Transfer the batter to the prepared cupcake liners – do not overfill, so the batter doesn’t overflow during baking.
- Bake at 180 degrees Celsius (top/bottom heat) for about 20 minutes – until a wooden skewer comes out clean.
- After baking, let the cupcakes cool.
How to make 3M cream for cupcakes
- Transfer the soft butter to a mixer bowl and beat until white – I beat for about 10 minutes.100 g butter
- Scrape the butter from the sides of the bowl, add condensed milk and mix briefly.100 g sweetened condensed milk
- Add mascarpone cheese one tablespoon at a time and mix briefly.200 g mascarpone cheese

- You can color the finished cream any color you like.
- Transfer it to a piping bag and decorate the cupcakes.
- If they are to be served on the same day, you don’t need to store them in the refrigerator – unless it’s very hot.

Honey cupcakes with cream – tips
I recently prepared some lovely honey cupcakes and decorated them with a cream called 3M cream. What does 3M cream mean? It’s butter, mascarpone, and sweetened condensed milk. On warmer days, this type of buttercream is better for decorating cupcakes than cream based on whipped cream. This is because it doesn’t mind being left out of the fridge. Additionally, buttercream holds its shape better, so decorations made with it are more durable. I could, of course, decorate my honey cupcakes with regular buttercream, but I’m not a big fan of it. It’s like eating butter with sugar. However, 3M cream, thanks to the use of condensed milk and mascarpone cheese, tastes much better according to me. And now, some of my tips for you.

How to make honey cupcakes with cream?
We start, of course, by preparing the cupcakes. You will need soft butter, honey, and buttermilk (preferably at room temperature), as well as other basic ingredients. Before adding the eggs to the cupcake batter, wash them thoroughly, place them in a bowl, and cover them with hot tap water – leave them for about 5 minutes – during this time they will warm up slightly.
These are creamed cupcakes; here we cream soft butter with sugar. I prefer to use powdered sugar in this case. Butter creams much nicer and faster with powdered sugar than with granulated sugar. But of course, you can also use regular granulated sugar (then use 3/4 cup of it). Cream the butter with sugar for a few minutes – longer if you’re using regular sugar – until the sugar dissolves and there are no lumps.
Sift the flour needed for the honey cupcakes through a sieve along with the baking powder. This will add fluffiness. Add honey to the creamed butter, then one egg at a time and a tablespoon of flour, and mix briefly – just until combined. Then add the buttermilk and the rest of the flour – remember that creamed batters should not be mixed with flour for too long, as it can result in a dense cake or cupcakes that are not fluffy.
I usually turn off the mixer when I still see remnants of flour. Then I just gently mix the batter with a spatula. We place the finished batter into cupcake liners and bake in the oven until a dry skewer comes out clean. After baking, let the cupcakes cool.
You can decorate honey cupcakes in any way you like. It can be simple powdered sugar, whipped cream, or melted chocolate. For special occasions, I recommend preparing 3M cream.

How to make 3M cream for cupcakes and decorations – tips and video
You will need butter, sweetened condensed milk, and mascarpone cheese at room temperature! This is extremely important, otherwise, the cream may curdle. Therefore, you must take all products out of the refrigerator at least 2-3 hours beforehand (depending on how warm it is at home). This cream usually has a basic proportion – equal parts in grams of butter and sweetened condensed milk, and twice as much mascarpone cheese. Here I used 100g butter, 100g milk, and 200g mascarpone.
You need to thoroughly mix the butter until it’s almost white – I mix for up to 10 minutes. Then I reduce the speed and add the sweetened condensed milk – mixing until combined. Then I add the mascarpone cheese, one tablespoon at a time, and mix just until combined. You can color the finished cream with food coloring – just a little bit of dye is enough to give the cream a nice color. If the cream curdles, you can try to save it.

How to save curdled buttercream?
Pour water into the bottom of a pot and bring it to a boil. Place a bowl with the cream on top and heat it over steam while mixing. This may take a few minutes, but usually, such a cream can be saved. If the cream reaches the right consistency – not watery – then you can use it for decoration.

How to decorate honey cupcakes for a dessert table?
I prepared three decorating bags (triangular) and two larger star tips, and one smaller star tip. I put cream in the basic color into one bag, added a little blue food coloring to the rest and mixed it lightly. But only enough so that the color was marbled, and I transferred about half of it to another bag with a larger tip. I then mixed the rest of the cream thoroughly to get a uniform blue color and transferred it to a bag with a smaller tip. I piped roses onto the cupcakes using the light cream – you can see how to make cream roses in my video how to make cream roses.
From the marbled cream, I piped simple dots next to the roses, and finally filled the empty spaces with dots from the small tip. Additionally, I decorated the cupcakes with small sugar pearls. This 3M cream decoration is very simple to make, but it looks very impressive. That’s why you can prepare such honey cupcakes with cream as cupcakes for a dessert table for various holidays and occasions :) Honey cupcakes are very tasty and can also last for a long time.
If you want to prepare them for a dessert table, store the baked cupcakes in an airtight container and decorate them with cream on the day of the event.
