Today I invite you to try these incredibly simple moist chocolate cupcakes. Their huge advantage is that you can prepare them even without a mixer! Just mix the ingredients with a spoon and prepare these amazing cupcakes in a few minutes. If you want to eat them for dessert with coffee, just drizzle them with chocolate glaze. For special occasions, I recommend decorating them with thick chocolate cream and colorful sprinkles.

  • 150 g wheat flour – all-purpose (- 1 cup)
  • 200 g sugar (- 1 cup)
  • 40 g bitter cocoa (- 1/2 cup)
  • 2 teaspoons baking powder
  • 2 eggs (- size L for me)
  • 1/3 cup oil (- 80 ml)
  • 120 g buttermilk (- 0.5 cup)
  • 120 ml hot water (- 0.5 cup)

  • 250 g dark chocolate
  • 250 ml heavy cream (- mine is 30%)
  • 50 g butter (soft)
  • 1-2 tablespoons mascarpone cheese (optional)

How to make simple chocolate cupcakes

  • In a large bowl, mix the dry ingredients.
    150 g wheat flour – all-purpose, 200 g sugar, 40 g bitter cocoa, 2 teaspoons baking powder
  • In a second bowl, mix the wet ingredients (without water).
    2 eggs, 1/3 cup oil, 120 g buttermilk
  • Add the wet ingredients to the dry ingredients and mix with a spoon.
  • Add hot water to the batter and mix carefully.
    120 ml hot water
  • Spoon the batter into cupcake liners – halfway up.
  • Bake at 180 degrees (top/bottom heat) for about 20 minutes – until a dry skewer comes out clean.
  • After baking, cool the cupcakes.
  • If you wish, use a teaspoon to cut out the center of the cupcake and fill it with some Nutella.

How to make chocolate cream for cupcakes

  • Pour the heavy cream into a saucepan and heat it.
    250 ml heavy cream
  • Add the broken chocolate and stir until it melts and combines into a smooth mass.
    250 g dark chocolate
  • Add the soft butter and mix thoroughly.
    50 g butter
  • Set aside the cream to cool and thicken – to a consistency suitable for piping.
  • Then transfer it to a piping bag and apply it to the cupcakes.
  • You can add some mascarpone cheese to part of the cream – this way you will get cream in different shades of brown.

Chocolate cupcakes with chocolate cream – notes

Recently I had a cupcake frenzy at home, so I have another recipe for you – this time for moist chocolate cupcakes.

Chocolate, although I added bitter cocoa, not chocolate, to the cupcakes themselves.

However, the cream for the cupcakes is intensely chocolatey and made with a generous amount of dark chocolate.

With current chocolate prices, one could say these chocolate cupcakes are true decadence ;)

But what delicious decadence!

The cocoa cupcakes with cream are super soft and moist – they can sit for a long time without drying out. I additionally stored them in an airtight container.

To make them even more chocolatey, after baking and cooling, I scooped out a little bit of the center with a small spoon and put a small spoonful of Nutella in its place.

I’m telling you, these triple chocolate cupcakes are pure madness!

How to make chocolate cupcakes – tips

I have prepared a short video of the preparation especially for you. You can watch it right below the recipe, so I cordially invite you.

But in short, I prepared these cupcakes my favorite way.

That is, two bowls and a spoon.

Into one bowl, I poured the dry ingredients and mixed them with a spoon.

Into the second bowl, I put the wet ingredients (without hot water) and eggs – I mixed them and then poured them into the dry ingredients.

I mixed the batter with a spoon and finally added hot water.

I put the cupcake batter into cupcake liners – we only fill the molds halfway so that the cupcakes don’t overflow during baking.

I got 16 cupcakes.

After baking, I set them aside to cool, and then I filled some of them with chocolate-nut cream.

Finally, I decorated them with delicious chocolate cream.

How to make chocolate cream for decorating cupcakes?

This chocolate cream is a very simple cream made from heavy cream, dark chocolate, and butter.

Heat the heavy cream in a saucepan – it is very important not to bring the cream to a boil.

It should be hot, but not boiled – I usually turn off the heat when air bubbles appear along the sides of the saucepan.

Then I add the broken chocolate to the cream and leave it for a few minutes to soften.

I thoroughly mix the chocolate with the cream until smooth, add the soft butter, and mix until it combines with the chocolate.

I set aside this chocolate cream to cool and thicken – you can put it in the fridge for about half an hour.

For the cream to be suitable for piping, it must be quite thick, but not too hard.

I transferred part of the cream to a piping bag with a star tip, and to the remaining part, I added some mascarpone cheese. I wanted to achieve different shades of brown.

I decorated the cupcakes with the finished cream, and finally added small sugar sprinkles.

My cocoa cupcakes with chocolate cream looked beautiful and tasted even better :)
