  • 1 teaspoon gelatin (+ a little water)

  • 150 g powdered sugar (1 cup)
  • 3 eggs (size L – at room temp.)
  • 150 g natural yogurt (at room temp.)
  • 200 g wheat flour – all-purpose (1 and 1/3 cups)
  • 2 teaspoons baking powder
  • 1 pinch salt
  • vanilla extract

Step 1 – preparing chocolate for white chocolate cream

  • Pour a small amount of cold water over the gelatin (just enough to cover it) and set aside for a few minutes to swell.

  • In a saucepan, heat the heavy cream until hot – but it doesn’t have to be boiling.
    200 ml heavy cream
  • Add the broken chocolate to the cream, wait about 2 minutes, and mix the softened chocolate thoroughly with the heavy cream until you get a smooth glaze.

  • Heat the gelatin until it becomes liquid and pour it into the chocolate mixture, mix thoroughly.
  • Cover the chocolate with plastic wrap, ensuring it touches the surface, and let it cool. Chill the cooled chocolate in the refrigerator for at least 6 hours, or preferably overnight.

Step 2 – preparing vanilla cupcakes

  • Sift the flour through a sieve together with baking powder and salt.
    200 g wheat flour – all-purpose, 2 teaspoons baking powder, 1 pinch salt
  • Mix the softened butter with powdered sugar and vanilla until a white and fluffy mass is obtained – I mix it for several minutes.

  • Add one egg and one tablespoon of sifted flour at a time to the butter mixture – mix briefly – just until combined.

  • Add natural yogurt to the bowl and mix briefly.

  • Add the rest of the flour and mix briefly on low speed – just until combined.

  • Transfer the batter to the prepared liners – approximately 3/4 full.

  • Bake the vanilla cupcakes in an oven preheated to 170 degrees Celsius (top/bottom heat mode) for about 20-25 minutes – until a dry skewer comes out clean.
  • Cool the cupcakes after baking.

Step 3 – preparing white chocolate cream for cupcakes

  • Transfer the chilled chocolate mixture to a larger bowl.

  • Add cold mascarpone cheese.

What ingredients are needed to prepare white chocolate frosting cupcakes?

To prepare the cupcakes with frosting, you will need a few basic ingredients. Below is a condensed list of essential products and possible substitutes.

  • white chocolate – I used as much as 300g of white chocolate for the frosting, so the frosting is quite sweet, but still not too sweet at all. When buying chocolate in a store, pay attention to the weight, because many chocolate manufacturers reduce their packaging, and often a bar of chocolate is no longer 100g, but 90 or even 80 grams.
  • mascarpone – for the white chocolate frosting, you will need 250g of mascarpone cheese (i.e., one smaller package); you can easily buy this cheese in discount stores like Lidl or Biedronka. In Biedronka, pay attention to whether you are buying plain mascarpone cheese, because it often stands next to cheeses with white chocolate or caramel flavor. These cheeses are already sweetened, and your frosting will be sweeter if you use them.
  • vanilla – to give the cupcakes a vanilla flavor, I added vanilla oil to it; it can also be regular vanilla sugar (you can then use a little less regular sugar). You can also use vanilla paste or vanilla extract.
  • heavy cream – heavy cream is needed to melt the chocolate – I used 30% cream in a carton here, and for greater stability, I added a little gelatin to the frosting. You can also use a fattier 36% heavy cream – then you can forgo adding gelatin.
  • natural yogurt – I used thick Greek yogurt here – remember that the yogurt must be at room temperature, so take it out of the refrigerator earlier to warm up. Ultimately, you can briefly heat it in the microwave to make it slightly warm.
  • eggs – for the cupcakes, you will need 3 large eggs (size L); they should be at room temperature, similar to the yogurt. If you forget to take them out of the refrigerator earlier, transfer them to a bowl and cover them with hot water – leave them there for a few minutes to warm up.

How to prepare perfect vanilla cupcakes – tips

My vanilla cupcakes today are creamed cupcakes. Creaming, or thoroughly mixing soft butter with sugar, makes the cupcake batter nicely aerated, and consequently, the baked cupcakes are fluffy, springy, and slightly moist. Therefore, properly creaming the butter with sugar is very important here. I recommend mixing butter with powdered sugar, which allows for a very smooth and fluffy mixture. I usually mix butter with powdered sugar for at least 5 minutes. Then, after each added ingredient, I mix the batter only on low speed and very briefly – just until combined. After adding all the flour, do not mix the batter for too long, as it will lose its fluffiness and lightness. It’s best to turn off the mixer when there are still remnants of flour visible and quickly mix them in with a spoon.

Transfer the prepared batter into the prepared cupcake liners – I place my liners into a special cupcake baking pan and fill them to about 3/4 full. If you have stiff cupcake liners that can stand on their own and won’t spread during baking, you don’t need to put them into a cupcake pan. Place them directly on a large baking sheet from the oven. From this batch of batter, I got 16 cupcakes – my liners were 3cm high and about 5cm in diameter. If you have larger liners, you will get fewer cupcakes.

White chocolate frosting for cupcakes: Recipe and techniques

White chocolate frosting is the proverbial “cherry on top” here. The vanilla cupcakes themselves are delicious, but as cupcakes, they look very simple and not very impressive. Chocolate frosting makes an ordinary cupcake an adornment for any table and an ideal sweet dessert. If you like decorating cakes and cupcakes with frostings, it’s worth buying at least one special piping tip for squeezing out the frosting, thanks to which the frosting will look perfect. The most versatile tip is the so-called star tip – when you look at it from above, it looks like a star. I most often use piping tips from Wilton M1, but similar ones can be bought from other companies. I used such a tip here for piping the frosting. Special piping bags, which are triangular in shape and fit the tips perfectly, are also very useful. If you don’t have such bags and tips, transfer the frosting to a thicker bag and cut off a corner (don’t cut too high), then pipe the frosting onto the cupcakes through the hole you made.

How to melt white chocolate for frosting?

I melted the chocolate for the frosting in heavy cream. Pour 200 ml of heavy cream from the carton into a saucepan and heat it on the stove. When the cream is hot and air bubbles start to appear along the sides of the saucepan, remove the pot from the stove. Add 300g of white chocolate to the hot cream. If you break it into pieces or even chop it with a knife, the chocolate will melt faster. I pour it in and wait about 2 minutes for the chocolate to soften from the heat, then I stir it thoroughly with a spoon until all the chocolate melts and I get a smooth glaze. Such a hot white chocolate glaze is still very liquid, so it needs to be cooled well to thicken.

How to get a stable white chocolate frosting?

For the white chocolate frosting to be stable and hold its shape nicely after piping onto a cupcake, you need to pay attention to a few things. Firstly, frosting prepared with heavy cream with 36% fat content will be more stable and thicker. If you use 30% cream, it’s worth adding 1 teaspoon of gelatin dissolved in a small amount of water to the chocolate – add it to the still warm chocolate – mix thoroughly and only then cool the chocolate. Secondly, the chocolate with the cream must be very well chilled so that it can be whipped. Therefore, it’s best to prepare it the day before and chill it in the refrigerator overnight, or for at least 6 hours. Thirdly, the mascarpone cheese added to the chocolate must also be very well chilled – keep it in the refrigerator along with the chocolate glaze. Transfer such well-chilled ingredients to a bowl and whisk with a mixer on high speed for several minutes – until you get a thick and stable frosting. Be careful not to “overwhip” the frosting, as it could curdle. Decorate the vanilla cupcakes with the ready frosting and serve immediately. If the cupcakes with frosting are not eaten right away, don’t worry, the frosting is stable and holds up well – my cupcakes sat with the frosting for a full 24 hours and nothing happened to it.

White chocolate frosting cupcakes: Variations

If you don’t have vanilla, or you fancy a different flavor of cupcakes, you can, of course, prepare the cupcakes themselves in other flavors, and it won’t be difficult. Depending on your preferences, you can make, for example, lemon cupcakes or cupcakes with another flavor. The blog has a recipe for lemon cupcakes, but you can make such cupcakes based on today’s recipe. But lemon cupcakes are not all – check below what other cupcake flavors you can make!

How to make lemon cupcakes with white chocolate frosting?

Do you like refreshing flavors? To prepare these cupcakes, you can swap vanilla extract for lemon extract. This will be the simplest and quickest version. You can also add grated lemon zest to the batter. Squeeze lemon juice and add it along with the zest to the cupcake batter. Only in this case, appropriately reduce the amount of natural yogurt added. So, if you add, for example, 60 ml of lemon juice to the cupcakes, use only 90g of natural yogurt. Add the lemon juice at the same time as the yogurt, and after that, add the flour.

What other flavors can be added to white chocolate frosting cupcakes?

What can you use instead of vanilla and lemon to flavor the cupcakes? Orange works great – it can be orange extract, orange zest, or orange juice (use it similarly to how I described using lemon juice above). You can also use other extracts – I personally love almond or coconut extract. You can choose your favorite extract.

Easter holidays are fast approaching, and these vanilla cupcakes with white chocolate frosting will be perfect as a sweet treat for the holidays. The mild taste and sweet chocolate frosting make these vanilla cupcakes appealing to both small children and adults. To give them a festive and Easter character, opt for appropriate decoration, and everyone will surely be delighted with them.

What toppings go well with Easter white chocolate frosting cupcakes?

When decorating my cupcakes, I opted for colorful chocolate mini eggs. You can find such eggs in larger stores (I bought mine at Dealz). There are now plenty of festive sweets available in discount stores. They don’t always have colorful eggs like mine, but you can easily buy small chocolate eggs – unwrap them and place a few on the frosting. You can also add fresh fruit, as I did – fresh strawberries or blueberries are now available. You can also sprinkle the frosting with colorful sugar sprinkles – you’ll also find these in stores – look among the holiday products. If you don’t have access to such decorations, you can sprinkle the cupcakes with grated chocolate. I cut regular chocolate with a slotted vegetable peeler – this creates nice, slightly curled shavings that look very decorative.
