- 150 g spinach
- 2 eggs (size L)
- 60 ml oil
- 3 tablespoons lemon juice
- 120 g natural yogurt (I used Greek – 1/2 cup)
- 150 g sugar (3/4 cup)
- 225 g wheat flour (1.5 cups)
- 1.5 teaspoons baking powder

- 250 g mascarpone cheese (cold)
- 250 ml heavy cream (well chilled)
- approx. 3 tablespoons powdered sugar (or to taste)
- raspberries (and blueberries – preferably fresh)

How to make forest moss cupcakes step by step
Step 1 – prepare spinach cupcakes
- Blend together spinach, wet ingredients, and sugar – I blend it with a blender.150 g spinach, 2 eggs, 60 ml oil, 3 tablespoons lemon juice, 120 g natural yogurt, 150 g sugar
- In a large bowl, mix together flour and baking powder.225 g wheat flour, 1.5 teaspoons baking powder
- Pour the wet ingredients into the flour and mix with a spoon until a smooth batter is formed.
- Spoon the batter into the prepared cupcake liners – about 3/4 full.
- Bake the muffin pan with cupcakes in an oven preheated to 180 degrees (top/bottom heat mode) for about 30 minutes – until a dry skewer comes out clean.
- After baking, cool the spinach cupcakes.
Step 2 – prepare mascarpone cream for cupcakes
- Transfer mascarpone cheese, heavy cream, and powdered sugar to a mixing bowl.250 g mascarpone cheese, 250 ml heavy cream, approx. 3 tablespoons powdered sugar
- Whip together on high speed with a mixer until you get a thick cream – I whip for a few minutes.
- You can transfer the cream to a piping bag with a decorative nozzle to make the applied cream look nicer.
Step 3 – decorate forest moss cupcakes with cream and fruit
- From about 4-5 cupcakes, cut off the domed tops with a sharp knife.
- Crumble the cut-off cake into fine crumbs.
- Apply the cream to all cupcakes.
- Sprinkle the top of the cream with cake crumbs.
- Decorate the cupcakes with fresh fruit.raspberries

Forest moss cupcakes with spinach and mascarpone – notes
Do you know forest moss cake (or forest moss torte)? It’s a layered cake made with spinach, where layers of green, moist cake are filled with mascarpone cream and forest fruits. The cake’s name comes from its green color, which resembles moss, and from the characteristic crumbled cake pieces sprinkled on top, creating a cushion-like forest moss. Today I made forest moss as cupcakes. This small form makes spinach muffins easier to serve and eat. You can place them on a dessert table, where they will be not only a wonderful decoration but also a tempting dessert. You must try them!

Ingredients needed to bake forest moss cupcakes
To prepare these unusual green cupcakes, you will need a few basic ingredients. Below is a shortened list of products I used and possible substitutes.
- spinach – I used frozen chopped spinach here, which I thawed beforehand. You can also use fresh spinach, but then remember that you need to blend it very thoroughly so that there are no large pieces of leaves in the cupcakes later.
- yogurt – I used thick Greek yogurt here; any other natural yogurt can also be used – but choose a thicker one
- lemon juice – lemon juice nicely balances the taste of spinach, so it’s not worth giving it up; if you don’t have a lemon to squeeze juice from, you can use “lemon concentrate”
- whipping cream – I used liquid cream in a carton with 30% fat content here, and I calculated the calorie count of the cupcakes for it. You can also use 36% whipping cream.
- mascarpone – this is an Italian smooth, creamy, and thick cheese; you can find it in larger stores, but also in discount stores like Biedronka or Lidl

How to make forest moss cupcakes – tips
To prepare the batter for green forest moss muffins, it’s best to blend the thawed spinach, eggs, oil, natural yogurt, and sugar with a blender. A stand blender will work great here, but a small hand blender will also be fine. I even blended spinach with additions in a smoothie blender with a ready-to-go bottle. Anything that allows you to blend the spinach into a smooth mass will be good. If you don’t have a blender, be sure to choose frozen chopped spinach – it will already be pre-blended, so it will be easier to mix it with the rest of the ingredients. Remember to thaw it beforehand and drain the water from it.

How to store forest moss cupcakes?
Due to the cream, it’s best to store the cupcakes in the refrigerator. This recipe yields a lot, and if you have trouble fitting them all in the fridge, do this: transfer the cupcakes themselves to an airtight container and keep them at room temperature in the kitchen or pantry. Store the cream separately in the refrigerator – although it’s best to prepare it just before serving the cupcakes to prevent it from becoming watery. Cream left in the refrigerator can tend to loosen and become watery. Only before serving, decorate the cupcakes with cream, sprinkle with crumbs, and arrange fresh fruit. This way, the cupcakes won’t take up your entire refrigerator.
