Chocolate Jaffa Cupcakes Recipe Step by Step
If you like intensely chocolate baked goods and also love fruit jellies, you must try this combination of flavors.

- 1 package jelly (fruit – for 500 ml of water)
- 400 ml hot water
- 200 g butter (softened)
- 150 g powdered sugar (- 1 cup)
- 3 eggs (size L)
- 200 g wheat flour – all-purpose (- 1 and 1/3 cups)
- 2 teaspoons baking powder
- 25 g unsweetened cocoa (- 3 slightly heaped tablespoons)
- 120 ml milk (lukewarm)
- 200 g chocolate (I used dark)
- 150 ml heavy cream (- if you use milk chocolate, reduce to 100 ml)

How to make chocolate delicje cupcakes with jelly
- Dissolve the jelly in hot water, pour into an airtight mold, and chill until completely set.1 package jelly, 400 ml hot water
- Mix the butter with powdered sugar for several minutes – until the mixture becomes voluminous and light in color.200 g butter, 150 g powdered sugar
- Sift the flour through a sieve with baking powder and cocoa.200 g wheat flour – all-purpose, 2 teaspoons baking powder, 25 g unsweetened cocoa
- Add one egg at a time and a spoonful of the mixed flour to the butter mixture – mix briefly – just until combined.3 eggs
- Add approximately half of the remaining flour and mix briefly.
- Pour in the milk and mix until combined.120 ml milk
- Add the rest of the flour and mix on low speed until combined – finish mixing with a spoon – if there are any remaining lumps of flour.
- Spoon the batter into the prepared cupcake liners – I used a very heaped spoonful for each cupcake.
- Bake in an oven preheated to 180 degrees Celsius (top/bottom heat) for about 20-25 minutes – until a dry skewer comes out clean. Let the cupcakes cool.
- Cut out circles about 5 cm in diameter from the set jelly.
- Using a knife or spatula, transfer the jelly circles onto the top of the cupcakes.
- Heat the cream in a saucepan. When hot, add the broken chocolate and stir until melted and combined into a smooth glaze – let it cool.150 ml heavy cream, 200 g chocolate
- Spread the chocolate glaze over the top and sides of the jelly – so that it is not visible.
- You can serve the cupcakes immediately, or chill them in the refrigerator for the glaze to set and harden more.

Chocolate Cupcakes with Jelly – Notes
My suggestion today is a real treat for chocolate lovers and chocolate baked goods enthusiasts. The chocolate cupcakes themselves, made with bitter cocoa, are incredibly tasty and have a wonderful velvety texture. Combined with sweet fruit jelly and chocolate glaze, they create an unforgettable blend of flavors. If you love Jaffa cakes, you’ll adore these cupcakes!
I was inspired to bake these cupcakes by Emily Leary’s recipe – I modified it a bit and present my version here.

List of Ingredients for Cupcakes with Jelly and Substitutes
To prepare these Jaffa cupcakes, you won’t need any hard-to-find ingredients. Everything is generally available in any store. Below is a list of the products I used and possible substitutes.
- chocolate – for the chocolate glaze, I used dark chocolate because I don’t like overly sweet baked goods. Instead, you can also use half milk and half dark chocolate, or just milk chocolate.
- cocoa – for the cupcakes themselves, I added bitter cocoa – and yes – it must be bitter cocoa – it can be regular or defatted.
- fruit jelly – you can use any jelly here – I had mango jelly.
- heavy cream – to prepare the chocolate glaze, you need heavy cream; I used 30% liquid cream from a carton. Such liquid cream is best for preparing the glaze.
- milk – for the cupcake batter, I added half a glass of lukewarm milk – I usually use 1.5% cow’s milk, you can substitute it with other milk – including plant-based, and ultimately it can also be room temperature water.

Techniques and Tips for Baking Chocolate Jaffa Cupcakes
It’s worth starting the preparation of the cupcakes with the jelly, as it will need a lot of time to set. To make it, you will also need a large airtight container – or two smaller ones. Pour the dissolved jelly into it to create a thin layer of liquid and set aside until completely firm.
In the set jelly, cut out circles with a diameter of 5 cm using a round cutter – I used a cookie cutter. Don’t make the circles too large, as they should fit on top of the cupcake with a free edge around.
Chocolate cupcakes are made from creamed batter. To make them nicely fluffy, you need to cream the butter and sugar well – until very fluffy and light. It’s good for the remaining ingredients to be at room temperature. After creaming the butter, mix the rest of the ingredients very briefly – just until combined!
How to Bake Chocolate Cupcakes?
I baked the chocolate cupcakes at 180 degrees Celsius and placed them in a preheated oven. The cupcakes baked for about 25 minutes – of course, it’s good to check them with a skewer before removing them to make sure they are ready. Every oven bakes a little differently. Additionally, if you put more batter into the cupcake liners, the cupcakes will need more time to bake. How to check if the cupcakes are ready? Just insert a toothpick into the center of a cupcake – if it comes out dry – not coated with wet batter – then it’s baked.

Chocolate Glaze: How to Prepare It?
To prepare the chocolate glaze, you must first heat the heavy cream until it is hot. However, do not bring it to a boil; turn off the heat when bubbles start to appear around the edges of the pot. Then remove the pot from the stove and add the broken chocolate – if you chop it finer, the chocolate will melt faster. Wait about 2 minutes for the chocolate to soften, then mix it thoroughly with the cream. If you are using only milk chocolate here, remember to use a little less heavy cream, as milk chocolate creates a thinner glaze than dark chocolate. Cool the prepared glaze and, when it thickens slightly, spread it over the top of the Jaffa cupcakes.
How to Store Jaffa Cupcakes?
Chocolate Jaffa cupcakes are best stored in an airtight container. If the cupcakes are not eaten immediately, it’s worth putting them in the refrigerator so that the chocolate glaze on them sets nicely.
Also, immediately after preparing the cupcakes, you can put them in the refrigerator for an hour so that the chocolate on top hardens slightly, and then serve them.

How Many Calories Do Chocolate Jaffa Cupcakes Have?
I got 16 cupcakes from this recipe, and with the products I used, one cupcake has about 310 kcal. If you get a different number of cupcakes, or change the products used, this value will be slightly different, but probably quite similar. I think such a calorie count for a chocolate cupcake is quite pleasant, and you can eat a cupcake without guilt.
