That’s why today I want to recommend gluten-free brownie cupcakes – delicious and perfect for people with gluten intolerance (but not only!) These small, chocolate wonders are soft and moist, and absolutely delicious – especially with the addition of cherries and mascarpone cream. They are made with dark chocolate and just a touch of ground almonds, and owe their fluffiness to well-beaten eggs with sugar. The cupcakes are ideal for an afternoon tea or as a dessert after dinner.

  • 100 g dark chocolate
  • 40 g butter
  • 2 eggs (size L)
  • 100 g sugar (- half a cup)
  • 30 g almonds (ground – approx 3 tbsp)
  • 0.5 teaspoon baking soda (- optional)

  • 250 g mascarpone cheese (chilled – mine is caramel :))
  • 100 g chocolate (- mine is white)

ingredients for cherry fruit filling

  • 150 g cherries (- I used frozen)
  • 1.5 tablespoons sugar (- or to taste)
  • a little water
  • 1 teaspoon potato starch

How to make gluten-free brownie cupcakes

  • Melt the chocolate together with the butter and set aside to cool – see my recipe tips where I explain how I do it.

  • Mix the eggs with sugar until a thick and fluffy mass is formed.

  • Add the cooled chocolate to the eggs and mix briefly.

  • Add the ground almonds and baking soda (if using) and mix briefly.

  • Spoon the batter into cupcake liners – I got 10 cupcakes.

  • Bake at 170 degrees (fan-assisted) for about 18-20 minutes.
  • The cupcakes will rise, but then they may sink, creating a depression – that’s how it should be :)
  • Cool the finished cupcakes.

How to make mascarpone cream

  • Melt the chocolate – preferably in a bain-marie.
    100 g chocolate
  • Transfer the cold mascarpone cheese to a bowl, add the chocolate, and mix thoroughly.

  • Refrigerate the cream for at least an hour to firm up (the longer it’s in the fridge, the thicker it will be).
  • Transfer the cream to a piping bag or a plastic bag and use it to decorate the top of the cupcakes.

How to make cherry fruit filling

  • Place the cherries in a saucepan, add sugar and a little water – I pour some water at the bottom to prevent the cherries from sticking.
    150 g cherries, 1.5 tablespoons sugar, a little water

  • Cook the cherries until they soften slightly and release their juice.
  • Dissolve potato flour or starch in a small amount of water and add to the hot cherries – mix vigorously until the mixture thickens.
    1 teaspoon potato starch
  • Set the cherries aside to cool, then spoon them over the mascarpone cream.

Gluten-free brownie cupcakes – notes

Today I have a recipe for true chocolate lovers and chocolate baked goods enthusiasts. I invite you to try these amazing and very simple brownie cupcakes in a gluten-free version. The cupcakes are gluten-free because they are made entirely without flour! Therefore, they will be great for people on a gluten-free diet, or those limiting gluten in their daily diet. Of course, anyone can eat these cupcakes; they are so delightful that no one will mind the absence of flour.

Ingredients necessary for preparing gluten-free cupcakes

These cupcakes consist of just a few basic ingredients generally available in every store, and most likely in your kitchen too. You will need good dark chocolate, butter, eggs, sugar, and a touch of ground almonds. I also added a little baking soda, but you can omit it. Instead of ground almonds, you can also use ground nuts – this way the cupcakes will also acquire a different flavor.

How to make gluten-free chocolate cupcakes – tips

I first melted the chocolate with butter and set it aside to cool.

How to melt chocolate for cupcakes?

I broke it, transferred it to a bowl, added butter, and heated it in the microwave for a minute. After that, I mixed it thoroughly so that the chocolate and butter combined. That minute was enough for all the chocolate to melt well. If you still have pieces of chocolate, heat it for a little longer.

What if you don’t have a microwave?

Then melt the butter in a pot, and when it’s hot, add the broken chocolate and stir until it melts. Once the chocolate cools, beat the eggs with sugar until thick and fluffy, then add the chocolate and ground almonds. Spoon the batter into prepared cupcake liners – I put two larger spoons per cupcake and bake.

How long to bake gluten-free brownie cupcakes?

Bake the cupcakes for about 18-20 minutes in convection mode. During baking, the cupcakes will rise, but towards the end of baking, or after removing them from the oven, they may sink. This is natural, and don’t worry about it – it’s the perfect spot for applying the cream :)

Baking is similar for chocolate cloud cake – there too, the cake rises and then sinks, creating a hollow in the middle. After baking, cool the cupcakes and then decorate them with cream and cherries.

How to make mascarpone cream for cupcakes?

The cream itself is very simple to make and requires only two ingredients – mascarpone cheese and white chocolate. It’s good if the mascarpone cheese is chilled, as the cream will be ready faster. I made my mascarpone cream with caramel mascarpone cheese. I was surprised myself when I took it out of the fridge, as I didn’t even know I had one. I threw it into the shopping cart and didn’t even notice it was flavored mascarpone – by the way, very interesting and indeed with a noticeable caramel flavor. I briefly blended the cheese with melted white chocolate and put it in the fridge for the cream to set.

In the recipe, you will also find a recipe for cherry fruit filling, which perfectly complements the taste of gluten-free brownie cupcakes. The whole creates a combination similar to the famous Black Forest cake – that is, chocolate cake, cream, and cherries.
