- 100 g butter (softened)
- 50 g Biscoff spread (at room temperature)
- 100 g powdered sugar (2/3 cup)
- 2 eggs (size L – at room temperature)
- 200 g wheat flour – all-purpose (1 and 2/3 cups)
- 2 teaspoons baking powder
- 150 ml buttermilk (preferably at room temperature)
- approx. 75 g Biscoff spread (- for filling the cupcakes)

- 375 g mascarpone cheese
- 150 g Biscoff spread
- a few Lotus biscuits (- optional)

How to make Biscoff cupcakes
- Mix the butter with the spread and sugar until very fluffy and light.100 g butter, 50 g Biscoff spread, 100 g powdered sugar
- Meanwhile, sift the flour with the baking powder through a sieve.200 g wheat flour – all-purpose, 2 teaspoons baking powder
- To the mixed butter, add one egg and a tablespoon of flour at a time – mix briefly – just until combined.2 eggs
- Add about half of the remaining flour and mix briefly.
- Pour in the buttermilk and mix on low speed.150 ml buttermilk
- Add the rest of the flour and mix briefly – stop mixing when you still see remnants of flour.
- Fold in the batter with a spoon.
- Spoon portions of the batter into cupcake liners – for me, it’s one heaped tablespoon per cupcake – filling about 2/3 of the liner.
- Bake the cupcakes in an oven preheated to 180 degrees Celsius (fan/conventional) for about 18-20 minutes – until a skewer inserted comes out clean.
- After baking, cool the cupcakes thoroughly.
- Heat the Biscoff spread until it becomes more liquid (can be done in the microwave).approx. 75 g Biscoff spread
- Using a sharp knife, cut out a small amount of cake from the center of each cupcake.
- Spoon a teaspoon of Biscoff spread into each and cover with the cut-out cake.
How to make Biscoff cream for cupcakes
- Mix the mascarpone cheese with the Biscoff spread until smooth.375 g mascarpone cheese, 150 g Biscoff spread
- Transfer the cream to a piping bag with a nozzle – I used a Wilton star nozzle (M1) – and pipe the cream onto the cupcakes.
- You can additionally sprinkle the top of the cream with crushed Lotus biscuits, or stick biscuits into the cream.a few Lotus biscuits

Biscoff Cookie Cream Cupcakes – notes
I recently spotted some cool Biscoff cream cupcakes on an American blog and decided to bake some for us too. The cupcakes themselves looked amazing there, but the recipe – especially for the cream made with Biscoff cream – didn’t convince me at all. Unfortunately, Americans love super sweet creams, and this cream was made with 3 cups of powdered sugar (oh my goodness) and two cups of butter. This is not a cream I would enjoy eating. That’s why I made my own version of Biscoff cupcakes with a cream that isn’t so sweet, and actually has no added sugar! Be sure to check out my version of these delicious cupcakes!

What ingredients are needed to make Biscoff cupcakes?
Besides the basic ingredients generally available in every store and usually already in your home, these cupcakes require Biscoff cream. What is Biscoff cream? It’s a cookie cream made from Lotus cookies. It’s usually a very smooth, caramel-colored cream, although I’ve also seen “crunchy” versions with larger cookie pieces. The cream itself has a great taste and you can use it not only for preparing cupcakes, but also like Nutella – for spreading on pancakes, small pancakes, or even sandwiches. Where to buy Lotus Biscoff cream? Sometimes you can find this cream in brick-and-mortar stores – for example, in Dealz stores or larger supermarkets. Unfortunately, it’s not yet available in permanent offers, so you might have trouble buying it. Therefore, I recommend purchasing it in online stores. I personally buy it on Allegro. It’s available in many auctions, so you can find it at a quite favorable price.
Besides Biscoff cream and basic ingredients like flour or eggs, you will also need:
- butter – at room temperature – I recommend extra butter with 82% fat content
- buttermilk – also preferably at room temperature – instead of buttermilk, you can also use kefir, or a thinner natural yogurt
- mascarpone cheese – for the decorating cream, instead of tons of powdered sugar and butter, I used mascarpone cheese. You can buy it at a discount store – such as Biedronka or Lidl – it will be at a more favorable price.

How to make Biscoff cream cupcakes – tips
These cupcakes owe their fluffiness and lightness to creaming butter with powdered sugar and Biscoff cream. Cream the butter for a long time, even several minutes. Then the butter will become very fluffy, the mixture will significantly increase in volume and take on a light color. To prevent the cupcake batter from losing its fluffiness, it’s good to sift the flour with baking powder through a sieve. Additionally, it’s good for the remaining ingredients to be at room temperature. It’s a good idea to place the eggs in a bowl of hot water for a few minutes to warm them up. Take the buttermilk out of the refrigerator in advance, and if you forget, you can briefly warm it in the microwave. Remember also that when adding the remaining ingredients to the creamed butter, mix them at lower speeds and very briefly! Only until the ingredients are combined. You can bake Biscoff cupcakes in advance and store them in an airtight container. Then, before serving, decorate them with a simple cream made from mascarpone cheese and Biscoff cream. You can also sprinkle the cupcakes with crushed Lotus cookies (which can be bought, for example, at Biedronka or Dealz).
