- 90 g mąki bezglutenowej (np. gryczanej, jaglanej – około 2/3 szklanki)
- 75 g mąki ryżowej (około 1/2 szklanki)
- 2 łyżeczki proszku do pieczenia (bezglutenowego – można zastąpić płaską łyżeczką sody)
- 250 ml maślanki (może też być kefir, albo mleko roślinne)
- 1 jajko (rozmiar L)
- 1 łyżka syropu klonowego (można pominąć)
- 45 g masła (rozpuszczonego lub oleju kokosowego)
- 0,5 łyżeczki cynamonu (opcjonalnie)
Instrukcja
Jak zrobić bezglutenowe placuszki
- W większej misce wymieszaj mąki, proszek do pieczenia i cynamon.90 g mąki bezglutenowej, 75 g mąki ryżowej, 2 łyżeczki proszku do pieczenia, 0,5 łyżeczki cynamonu
- Dodaj do miski maślankę, jajko, masło oraz syrop i dokładnie wymieszaj albo zmiksuj.250 ml maślanki, 45 g masła, 1 łyżka syropu klonowego
- Rozgrzej patelnię i delikatnie posmaruj ją olejem (ja to robię pędzelkiem silikonowym).
- Nakładaj po łyżce ciasta na placuszek – smaż na małym ogniu (ja dodatkowo patelnię przykrywam pokrywką) – gdy ciasto z góry przestanie wyglądać na mokre, to delikatnie przewróć placuszki na drugą stronę. Podsmaż przez około minutę i zdejmij.
- Placuszki podaj z ulubionymi dodatkami.

Gluten-free pancakes – notes
There are already many pancake recipes on the blog, and today gluten-free pancakes without sugar are joining them.
I had previously made coconut pancakes, which were also gluten-free. However, coconut flour is very temperamental, and the pancakes don’t always turn out well for everyone.
That’s why today I have a version using other types of gluten-free flour.

What ingredients are needed for gluten-free pancakes?
In this case, I used rice flour and a gluten-free mix from Incola (if I remember correctly, I bought it at Lidl).
Besides flour, you will also need buttermilk (kefir or a plant-based drink can also be used if you want to completely forgo “dairy” products), one large egg, and melted butter.
Instead of butter, you can also use oil or coconut oil.
The only “sweetener” inside is a tablespoon of maple syrup, but if you don’t have it, you can omit it.
I also added some cinnamon to the pancake batter because I add it everywhere in autumn :)
The gluten-free pancakes turned out fluffy and light. And I fried a huge plate of them.
I served them with a little whipped cream, preserves, and blueberries.
The pancakes themselves are not sweet, so you can easily drizzle them with syrup or honey.
