  • 120 g butter
  • 100 g chocolate (I used dark chocolate)
  • 100 g sugar (half a cup)
  • 1 package preserves (plum preserves from Stovit – 240 g)
  • 3 eggs (size L)
  • 150 g wheat flour – all-purpose (- 1 cup)
  • 2 teaspoons baking powder
  • 1 teaspoon gingerbread spice

  • 100 g chocolate (I used milk chocolate)
  • 250 g mascarpone cheese
  • 2 teaspoons gingerbread spice
  • 500 ml heavy cream (well chilled)

  • 100 g preserves (plum preserves from Stovit)

How to make chocolate-plum cake

  • Melt the butter in a large pot. Add the broken chocolate to the hot butter and mix thoroughly until the chocolate melts.
    120 g butter, 100 g chocolate
  • Add sugar and plum preserves to the chocolate and mix thoroughly.
    100 g sugar, 1 package preserves
  • Combine the flour with baking powder and gingerbread spice, then add to the chocolate and mix with a spoon.
    150 g wheat flour – all-purpose, 2 teaspoons baking powder, 1 teaspoon gingerbread spice
  • Beat the eggs into the batter and mix thoroughly.
    3 eggs
  • Grease the baking pan with butter and dust with flour or breadcrumbs.
  • Pour the batter into the pan and bake at 170 degrees (fan-assisted) for approximately 30-35 minutes (until a wooden skewer comes out clean).
  • After baking, let it cool.

How to make chocolate-gingerbread cream for molehill cake

  • Melt the chocolate in a double boiler (break it into pieces and place it in a heatproof bowl set over a pot of simmering water).
    100 g chocolate
  • Add the melted chocolate and gingerbread spice to the mascarpone cheese and mix thoroughly.
    250 g mascarpone cheese, 2 teaspoons gingerbread spice
  • Place the mascarpone and chocolate mixture in the refrigerator to chill for approximately one hour.
  • Whip the cold heavy cream until thick, gradually adding the mascarpone cheese with chocolate, one spoonful at a time. Mix until all ingredients are combined.
    500 ml heavy cream
  • If you like sweet creams, you can additionally sweeten the cream with powdered sugar.

Plum Molehill Cake – finishing

  • Remove the cake from the pan and cut off its top with a sharp knife.
  • Using a spoon, remove some cake from the center to create a shallow hollow.
  • Crumble the removed cake and the cut-off part into crumbs.
  • Spread the cake with a few spoonfuls of Stovit plum preserves.
    100 g preserves
  • Spread the chocolate-gingerbread cream over the preserves to form a protruding dome.
  • Sprinkle the top of the cake with a thick layer of crumbs from the cut-off cake.

Plum Mole Hill Cake with jam – notes

You probably know the mole hill cake in a version with bananas inside?

I prepared a plum mole hill cake inspired by the upcoming Christmas holidays.

The base of my cake is an amazing chocolate cake with a lot of plum jam from Stovit.

The cake practically smells of them, and the plums are noticeable in the taste.

It’s hard to resist, and I must admit that I snacked on the cake myself during its preparation.

After baking, we cut off the top and additionally hollow out the cake slightly.

And I snacked on those cut-out pieces because I couldn’t resist. Fortunately, what was left was enough to sprinkle over the entire top :)

Then I made a chocolate-gingerbread cream.

I mixed mascarpone cheese with melted chocolate and gingerbread spice, and when it cooled, I whipped it with heavy cream.

Now it was enough to add an extra portion of jam and cream to the hollowed-out cake. The cream should form a protruding dome, which, after being sprinkled with cake crumbs, looks exactly like a mole hill.

I tell you, the cake tasted amazing and disappeared very quickly.

Even my son, who rarely eats cakes, really enjoyed it :)
