- 200 g butter (softened)
- 200 g powdered sugar (- 1 and 1/3 cups)
- 4 eggs (size L)
- 250 g wheat flour – all-purpose (- 1 and 2/3 cups)
- 2 teaspoons baking powder
- 100 g white chocolate (chopped)
- approx 250 g raspberries

How to make raspberry and white chocolate cake
- Mix the butter with powdered sugar for a few minutes – until it becomes light.200 g butter, 200 g powdered sugar
- Sift the flour through a sieve together with the baking powder.250 g wheat flour – all-purpose, 2 teaspoons baking powder
- Add one egg at a time to the creamed butter, and immediately a spoon of flour – mix briefly – just until combined.4 eggs
- Add the rest of the flour and mix briefly – stop mixing when you still see remnants of flour.
- Add about half of the chopped chocolate to the batter and gently mix with a spoon.100 g white chocolate
- Transfer the batter to the prepared baking dish (mine was lined with baking paper).
- Arrange the raspberries on top of the cake and sprinkle them with the rest of the chocolate.approx 250 g raspberries
- Bake the cake in an oven preheated to 170 degrees (fan-assisted) for about 40-50 minutes – until a wooden skewer comes out clean.
- After baking, let the cake cool, and before serving, you can additionally sprinkle it with powdered sugar.

Butter cake with white chocolate and raspberries – notes
I prepared this delicious fluffy creamed cake for weekend snacking, and everyone liked it so much that I decided to add the recipe here.
The cake was particularly liked by my daughter, who kept peeking into the kitchen for another piece.
This is a creamed butter cake; the cake turns out nicely fluffy and can stay fresh for a long time without drying out. To keep the cake fresh for longer, you should store it covered, preferably in a fairly airtight container. The cake can then easily last for several days.

How to make creamed raspberry cake – tips
Creamed butter cake will turn out well if you properly mix soft butter with sugar. I recommend using powdered sugar here, as the butter will whip up nicely much faster. It’s best to mix the butter for a few minutes – 5-10 minutes is perfectly sufficient.
For greater fluffiness, it’s worth sifting the flour with baking powder through a sieve, and keeping the eggs in hot water for a few minutes beforehand.
The key to a fluffy butter cake is short mixing after adding the flour. Stop mixing when traces of flour are still visible in the dough, and then just briefly stir once or twice with a spoon. If you mix the butter with flour for too long, the cake may lose its fluffiness and turn out heavy and dense, and a soggy layer might even appear!

What kind of raspberries for the cake?
Due to raspberry season, I used fresh fruits here and arranged them on top of the cake. Outside of fresh raspberry season, you can use frozen fruits – you don’t need to thaw them beforehand, but try not to add too much then – a maximum of 250 g will suffice.
I made my cake with white chocolate, but you can also use milk, caramel, or even dark chocolate.
