  • 65 g walnuts (- a generous half cup)
  • 100 g dark chocolate
  • 150 g butter (softened)
  • 150 g powdered sugar (1 cup)
  • 2 eggs (size L)
  • 75 g wheat flour – all-purpose (- half a cup)
  • 2 teaspoons baking powder
  • about 50 g walnuts (preferably halves)

How to make chocolate cake with walnuts

  • Lightly chop the walnuts, transfer them to a baking sheet and bake at 180 degrees (top/bottom heat) for approximately 8-10 minutes – be careful not to burn them! Set aside to cool.

  • Break the chocolate into pieces and melt it in a bain-marie – pour a little water into the bottom of a pot and bring it to a boil, place a heatproof bowl with the broken chocolate over the pot and heat it until it melts.

  • Cool the chocolate.
  • Cream the softened butter with sugar until fluffy.

  • Meanwhile, sift the flour together with the baking powder through a sieve.

  • Add the eggs one by one to the butter mixture, mixing briefly after each addition.

  • Add the cooled chocolate to the batter and gently mix.

  • Finally, add the chopped toasted walnuts (65 g) and mix with a spatula.

  • Transfer the batter to the prepared pan.
  • Arrange walnut halves on top.

  • Bake the cake at 180 degrees (top/bottom heat) for approximately 30-35 minutes – the cake will rise slightly, but then will slightly sink.

Chocolate cake with walnuts – notes

The recipe for this Swiss chocolate cake with walnuts comes from Eric Lanlard’s book titled “Chocolate”.

As Eric writes, he himself doesn’t know 100% if this cake is Swiss, but he has known it as such since childhood :)

This chocolate cake is one of his favorites, and I understand why.

The cake is simple to make, and delicious too.

The combination of dark chocolate and a large amount of walnuts is sensational.

I really like walnuts, so I really enjoyed this cake.

If for some reason you cannot use these nuts – you don’t like them, you have an allergy, or you don’t have them, then use others.

I think hazelnuts would fit perfectly here. Especially if you briefly toast them beforehand.

Toasting brings out the flavor of the nuts, so it’s worth not skipping this step during preparation.

Swiss chocolate cake is a brownie-type cake (although we add baking powder to it).

After baking, it is dense and rich.

And a large amount of nuts provides a great crunch in every bite.

How to make Swiss chocolate cake?

But in short – first toast the nuts and melt the chocolate – here we use dark chocolate!

Flour should be sifted through a sieve together with baking powder.

Cream butter with sugar – I used powdered sugar, in the book, cane sugar is used – choose whichever you prefer.

Then add the remaining ingredients to the butter and mix briefly.

Additionally, arrange walnut halves on top of the cake (you don’t need to toast these beforehand – they will bake during cooking).

You can serve the warm cake with a scoop of ice cream and, of course, a cup of coffee :)
