- 450 g wheat flour – all-purpose (3 cups)
- 300 g sugar (1.5 cups – the cake is not very sweet – you can use more sugar if you want it sweeter)
- 1 teaspoon baking soda
- approx 80 g dark cocoa (9 tablespoons – you can use 50 g if you want a sweeter cake)
- approx 360 ml milk (mine is 1.5%)
- approx 310 g mayonnaise (1.5 cups)

- 200 ml heavy cream (if you want to use milk chocolate, reduce the amount of cream to 100-120 ml)
- 200 g dark chocolate

How to make chocolate mayonnaise cake
Step 1 – mix dry ingredients
- Pour flour into a large bowl, add baking soda, sugar, and dark cocoa.450 g wheat flour – all-purpose, 300 g sugar, 1 teaspoon baking soda, approx 80 g dark cocoa
- Mix everything together with a spoon or a whisk.
Step 2 – add wet ingredients to the batter
- Add milk to the bowl and mix briefly – it doesn’t have to be thoroughly mixed.approx 360 ml milk
- Add mayonnaise and mix until you get a smooth batter. If the batter is too thick, you can add a little more milk to it.approx 310 g mayonnaise
- Transfer the batter to a baking pan lined with baking paper or greased with butter and floured (or dusted with breadcrumbs).
Step 3 – bake the mayonnaise cake
- Place the pan with the chocolate cake in an oven preheated to 170 degrees (fan mode) or 180 degrees (top/bottom mode) and bake for about 45 minutes – until a dry skewer comes out clean.
- After baking, cool the cake.
Step 4 – prepare chocolate glaze for the cake
- In a saucepan, heat the heavy cream (remember that if you are making a glaze with milk chocolate, you need less cream), when it’s hot, add the broken chocolate to it.200 ml heavy cream, 200 g dark chocolate
- Mix thoroughly until you get a smooth glaze.
- Cool the chocolate and when it slightly thickens, pour it over the top of the cake.
- You can additionally sprinkle the top of the glaze with chocolate sprinkles or grated chocolate.

Mayonnaise chocolate cake – notes
Mayonnaise cake, or more precisely, mayonnaise bundt cake, is probably not new to you. The tradition of baking such a bundt cake is quite deep in Poland, and I myself have on my blog a recipe for mayonnaise cupcakes and for a spotted bundt cake with mayonnaise. Our Polish recipes allow for baking a fluffy cake. However, today I have a recipe in the American version. This cake is made without a mixer, mixed with a spoon in a bowl. With just a few basic ingredients. Moreover, this cake turns out very moist, dense, and more “meaty” – closer to a brownie than a fluffy cake. You must try it if you like intensely chocolate cakes.

What ingredients are needed to make mayonnaise cake?
For the cake itself, you will only need 6 commonly available ingredients – wheat flour, sugar, milk, bitter cocoa, baking soda, and of course, mayonnaise. I did not add any eggs, butter, or oil to the cake. Mayonnaise is the only fat added to the cake. I additionally drizzled my cake with a simple chocolate frosting made from 30% heavy cream and dark chocolate (I prefer less sweet cakes). If you don’t want to make it, simply sprinkle the mayonnaise cake with powdered sugar after baking.

How to make vegan chocolate cake with mayonnaise?
From this recipe, you can very easily prepare vegan chocolate cake. All you need to do is buy vegan mayonnaise in the store – there’s quite a wide selection. Additionally, remember to replace cow’s milk with plant-based milk – choose your favorite plant-based drink. If you want to make chocolate frosting for your vegan cake, buy vegan chocolate and melt it with a small amount of plant-based milk – it’s best to do this in a bain-marie.

How many calories does chocolate mayonnaise cake have?
The calorie count for 100 g of cake (with chocolate frosting) is given above in the recipe, but if you divide the cake into 24 roughly similar-sized portions, a slice of cake will have approximately 290 kcal (carbohydrates – 32 g, protein – 4 g, fat – 15 g). Here I provide the calorie count calculated for the products I used. Cake without frosting will, of course, have fewer calories.
