Full of juicy raspberries and crunchy nuts. Its preparation is extremely simple and quick, and it doesn’t even require a mixer! This is the perfect quick raspberry cake for a weekend dessert, or a snack during the day. You can pack it for work, or for a school lunch box. You must try it!

- 100 g butter (melted)
- 375 g ricotta
- 3 eggs (size L)
- vanilla (optional)
- 225 g wheat flour – all-purpose (1½ cups)
- 2 teaspoons baking powder
- 200 g sugar (1 cup)
- approx 250 g raspberries (can be more)
- pistachios (for sprinkling – optional)

How to make ricotta and raspberry cake step by step
Step 1 – preparations
- Turn on the oven to 170℃ (fan-assisted) or 180℃ (top/bottom heat mode).
- Grease the baking pan with butter and sprinkle with flour, or line with baking paper.
- Melt the butter and set aside to cool slightly.100 g butter
- Mix the flour and baking powder together.225 g wheat flour – all-purpose, 2 teaspoons baking powder
Step 2 – preparing the batter
- Transfer the ricotta cheese and eggs to a large bowl – you can also add a little vanilla extract or flavoring for taste – mix together until smooth.375 g ricotta, 3 eggs, vanilla
- Add the cooled butter and mix.
- Add sugar and mix.200 g sugar
- Add the mixed flour and stir.
- Spoon about half of the batter into the prepared pan.
- Arrange some of the raspberries on top, gently pressing them into the batter.approx 250 g raspberries
- Spread the rest of the batter and gently smooth it out.
- Arrange the remaining raspberries on the cake.
- Finally, sprinkle the top with lightly chopped pistachios.pistachios
Step 3 – baking the cake
- Place the cake in the preheated oven and bake for about 50 minutes – until a skewer comes out clean.
- After baking, let the cake cool, and before serving, you can additionally sprinkle it with powdered sugar.

Why is it worth baking this quick cake with raspberries and cheese?
My cake today is great for last-minute preparation. It doesn’t require ingredients to be at room temperature, so you don’t have to remember to take them out of the fridge beforehand. It doesn’t require any equipment – just a bowl and a spoon, or a whisk. It doesn’t require any complicated ingredients. Its base is ricotta cheese – you’ll need 375g of it, which is usually 1.5 packages. Add raspberries and you can bake. Thanks to the cheese, the cake has a unique taste, but also great moisture. This keeps it fresh longer and prevents it from drying out. Try it and see for yourself!

What ingredients are needed to bake the cake?
To make this cake, you basically need 7 ingredients plus optional flavor additions :) Below is a shortened list of products I used and possible substitutes.
- ricotta – it’s a light Italian curd cheese, you can easily find it in any larger store and discounters – such as Lidl or Biedronka, however, if you can’t find it anywhere, you can substitute it with cheesecake curd from a tub – but a “looser” one like President, Delikate from Biedronka, or Pilos from Lidl
- butter – I used extra butter with 82% fat, optionally you can substitute it with vegetable butter, or as a last resort, with a mild-flavored oil
- pistachios – to add a slight crunch to the cake, I sprinkled its top with pistachios, but you can omit them, or use, for example, chopped almonds, or almond flakes

Can I use frozen raspberries for the cake?
If you don’t have fresh fruit, you can use frozen raspberries. You don’t need to thaw them beforehand.

Can the cake be prepared with other fruits?
Of course! You can choose other currently available seasonal fruits. If they are large – like apples, pears, or peaches – cut them into smaller pieces beforehand. Blueberries, wild berries, cherries, or sweet cherries will also work great here – remember to pit the fruits beforehand!
How to store ricotta and raspberry cake?
After the cake has completely cooled, I recommend transferring it to an airtight container with a lid, or covering the cake stand with a dome. This will keep the cake fresh and moist for longer. If it’s not too hot in your home, the cake can stay out for about 3 days. If it’s to last longer, it’s worth putting it in the fridge so it doesn’t spoil from the fruit.
Can raspberry cake be frozen?
Yes, you can freeze this cake for about 3 months. After cooling, divide it into portions and freeze it that way.
