How to make coffee muffins
- Add coffee to hot water and mix, pour in milk, mix and set aside to cool slightly.180 ml hot water, 2 teaspoons instant coffee, 60 ml milk
- In a bowl, mix together eggs, sugar and oil.2 eggs, 200 g sugar, 180 ml oil
- Add coffee and mix.
- In a second bowl, mix the dry ingredients.300 g wheat flour – all-purpose , 2 teaspoons baking powder, 0.5 teaspoon salt, 1 teaspoon cinnamon
- Add the wet ingredients to the dry ingredients and mix thoroughly.
- Spoon the batter into the prepared paper liners.
- Bake the coffee muffins in an oven preheated to 205-210 degrees (top/bottom heat mode) for about 20 minutes – until a toothpick comes out clean.
- After baking, cool the muffins.

Coffee muffins: a combination of sweetness and intense coffee flavor
My muffins today are so perfect that you absolutely must try them! Nicely tall, soft and fluffy, moist, and with that wonderful coffee aroma. I found the recipe for these wonders on the blog Entertaining with Beth and practically baked them right away. The coffee cupcakes turned out so delicious that I absolutely have to share the recipe (I’m providing a slightly modified version here). So, if you like the taste of coffee in sweet baked goods, then you must bake these muffins!

Ingredients necessary for preparing coffee muffins
These muffins are prepared with very basic and widely available ingredients that you probably already have at home, or can easily get in any store. Below I provide a shortened list of products with possible substitutes.
- coffee – instant coffee will be best, but if you don’t have it, only regular ground coffee, then make it, then strain it to remove the grounds and only then add milk.
- milk – I used regular 1.5% milk here – you can use any milk, or replace it with plant-based milk
- oil – I added 3/4 cup of oil to the muffins, I used rapeseed oil here. You can also use another type of oil – e.g. coconut, or melted and cooled butter.
- wheat flour – I used type 450 flour here, type 500 or 550 can also be used – all-purpose flour will be good too

How to prepare coffee muffins – tips
Preparing coffee muffins is super simple and quick, so I’m convinced that everyone will manage it without any problems. This is a typical batter prepared even without using a mixer. Here, simply mix the wet ingredients in one bowl and the dry ingredients in another, then combine them. First, prepare the coffee so it has time to cool down a bit – you can also put it on the balcony, it will cool faster. It’s best to mix the dry ingredients with the wet ones using a whisk or a stirrer. You don’t need to mix them for a long time – just until the ingredients combine and there are no lumps in the batter.
Then pour the batter into the prepared cupcake liners. The batter is liquid, so it’s easiest to pour it or ladle it in. I had tall cupcake liners, so-called tulips, and I filled the batter up to the height of my muffin tin. Thanks to this, the coffee muffins rose nicely. If you have shorter liners, fill them to about 2/3-3/4 of their height – you’ll probably get more muffins :)
How to make coffee muffins with chocolate?
If you want to enhance the flavor of coffee muffins, you can add some chopped chocolate or chocolate chips to them. The muffins themselves are quite sweet, so you can add dark chocolate. However, if you prefer sweeter baked goods, add milk chocolate. Mix the chopped chocolate directly into the batter. You can also prepare a chocolate glaze and pour it over the cooled muffins.

How to make chocolate glaze for muffins?
If you want to additionally drizzle your coffee muffins with chocolate glaze, heat heavy cream in a saucepan and when it’s hot, add chopped chocolate to it. Mix the glaze, let it cool, and when it thickens, pour it over the tops of the muffins, or dip the muffins in the glaze.
How much heavy cream and chocolate do you need to prepare chocolate glaze? It depends on the chocolate used. For 100 g of dark chocolate, use 100 ml of heavy cream. For 100 g of milk chocolate, use 50-75 ml of heavy cream. And for 100 g of white chocolate, use a maximum of 50 ml of heavy cream. I usually use 30% fat heavy cream from a carton here.

How to bake perfect muffins?
For muffins to be nicely risen, tall, and springy, it’s good to bake them at a high temperature. You can bake them in two ways.
First method – preheat the oven to 220 degrees Celsius in top/bottom heat mode. Place the coffee muffins in the hot oven and bake at this temperature for 5 minutes. After this time, lower the temperature to 200 degrees Celsius and bake for about 15 minutes.
Second method – if you’re not sure you’ll remember to lower the temperature, set the oven to 205 degrees Celsius (if your oven isn’t that precise, set it to 210) and bake the muffins for about 20 minutes.
As is known, every oven bakes slightly differently, and you know yours best. Therefore, at the end of baking, check if the coffee muffins are well baked, and if necessary, extend or shorten the baking time slightly. I check them with a metal cake tester, but you can also use a toothpick or a skewer.

How to check if coffee muffins are baked?
To check if the muffins are well baked, insert a stick or toothpick into their center – at the highest point, so that it reaches the very bottom. If the toothpick comes out dry (not coated with wet batter), then the cupcakes are ready and can be removed from the oven. If it’s wet, extend the baking time.

How to store coffee muffins?
Store muffins best in an airtight container so they don’t dry out. Also, don’t remove them from their paper liners too early – they also protect the muffins from excessive drying.
Can muffins be frozen?
Yes, you can freeze muffins. It’s best to do this after they have completely cooled. Such coffee muffins can be kept in the freezer for about 3 months.
