- 100 g sugar (- half a cup)
- 150 g wheat flour (type 450-500 – 1 cup)
- 0.5 teaspoon baking soda
- 1 teaspoon coffee (ground)
- 2 heaping tablespoons dark cocoa

- 1 teaspoon coconut oil
- 0.5 teaspoon coffee (instant powder)

How to make vegan dairy-free chocolate cookies
- Mix the flour with baking soda, cocoa, ground coffee, and sugar.100 g sugar, 150 g wheat flour, 0.5 teaspoon baking soda, 1 teaspoon coffee, 2 heaping tablespoons dark cocoa
- Add coconut oil and knead the dough – if it doesn’t come together into a smooth mass, add a little cold water.100 g coconut oil
- Scoop portions of dough with a teaspoon and roll into walnut-sized balls.
- Arrange the balls at intervals on a baking sheet.
- Make an indentation in each ball with the handle of a wooden spoon (or your thumb).
- Bake at 180 degrees (top-bottom mode) for about 8 minutes – after baking, the cookies will be soft, so do not move them.
- When the cookies cool, they will harden slightly.
- Break the chocolate into pieces and transfer to a heatproof dish.100 g chocolate
- Add oil and instant coffee and heat together in a double boiler – mix thoroughly.1 teaspoon coconut oil, 0.5 teaspoon coffee
- Cool the chocolate, and when it thickens, spoon it into the holes in the cookies.

Vegan chocolate cookies – notes
Today I have a new cookie recipe for you :)
I invite you to try vegan chocolate cookies with coffee (although if someone doesn’t like coffee, they can easily omit it).
I prepared the cookies using Allnutrition coconut oil.
Besides that, there is no additional fat or eggs in them.
You’ll make the cookies themselves very quickly and easily.
You don’t need to chill them before baking, nor do you need to cut out shapes with cookie cutters.
Just roll small balls of dough, make a hollow in them, and bake.
The cookies are soft right after baking, so don’t be alarmed!
When they cool, they will harden slightly, and only then remove them from the baking sheet.
I filled my vegan chocolate cookies with dark chocolate melted with a little coconut oil and instant coffee.
I waited until the chocolate started to thicken, then transferred it to a piping bag with a star tip and piped it onto the cookies.
Thanks to this, the cookies looked fantastic.
If you don’t want chocolate, put your favorite jam, marmalade, or even peanut butter on the cookies.
Such cookies will be a decoration for any table, which is why I can recommend them for Christmas :)
