- 120 ml warm milk
- 1 teaspoon sugar (for yeast)
- 300 g wheat flour – all-purpose (2 cups)
- 50 g sugar (1/4 cup)
- 2 eggs (size L)
- 25 ml oil (2 tablespoons)

- 2 bananas (about 200 g)
- 100 g sugar (half a cup)
- 50 g butter
- 90 ml heavy cream

- 100 g wheat flour – all-purpose (2/3 cup)
- 70 g sugar (1/3 cup)
- 60 g butter (3 slightly heaped tablespoons)

How to make yeast dough
- Mix the yeast with a teaspoon of sugar, pour in lukewarm milk and mix.25 g fresh yeast, 120 ml warm milk, 1 teaspoon sugar
- Cover the yeast and set aside for about 15 minutes until it starts to work.
- In a mixer bowl, place the flour, eggs, sugar, and oil.300 g wheat flour – all-purpose, 50 g sugar, 2 eggs, 25 ml oil
- Add the yeast starter and knead a smooth dough.
- Cover the bowl with the dough with a cloth and set aside in a warm place for about an hour.
How to make bananas in caramel
- Pour sugar into a dry pan and add a tablespoon of water – heat until all the sugar dissolves and turns an amber color.100 g sugar
- Add butter to the dissolved sugar and mix carefully.50 g butter
- Pour in the cream and stir until the sauce is smooth.90 ml heavy cream
- Slice the bananas, then mash them with a fork.2 bananas
- Add the bananas to the caramel sauce and mix – set aside to cool.
How to make crumble for cake
- Pour flour into a bowl, add sugar and butter cut into pieces.100 g wheat flour – all-purpose, 70 g sugar, 60 g butter
- Crumble everything with your fingers to form lumps.
Yeast cake with bananas – preparation
- Grease a baking pan with a diameter of about 26 cm with butter and sprinkle with flour.
- Briefly mix the risen yeast dough and transfer it to the baking pan.
- Top with bananas in caramel.
- Sprinkle the cake with crumble.
- Cover the cake with a cloth and set aside for half an hour to rise.
- Meanwhile, preheat the oven to 180 degrees (top-bottom mode).
- Place the cake in the oven and bake for about 35 minutes – until golden brown.
- Cool after baking.

Yeast cake with bananas – notes
I am, however, a huge fan of yeast cakes! When I see and smell a warm yeast cake, I can’t resist snacking. It was no different with this yeast cake with bananas in caramel. I forbade my family from touching it – because, you know, photos had to be taken. And while cutting pieces for the photos, I quietly snacked myself. A piece of crumble broke off here, the cake wasn’t cut evenly there. I’m a hopeless case! Who else is like this? Who understands this extraordinary craving for yeast? Please confess without fear!

How to make such a banana yeast cake in caramel – tips
First, prepare the yeast dough – for me, a mixer is indispensable for this. It “does” all the hard work. When the dough is ready and rises nicely in a warm place, then we move on to the bananas in caramel. First, we make the caramel – you can make it in a pan, and then we add mashed bananas to it. We mix, mix, and set aside to cool. Briefly knead the risen dough again and transfer it to a baking pan. Arrange the bananas, and then the crumble on top. And into the oven. And after about 30 minutes, we have a warm, fragrant yeast cake with bananas :)
