- approx. 70 g peanut butter (2 very heaped tablespoons)
- 150 g wheat flour – all-purpose (1 cup)
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- approx. 50 g sugar (erythritol/xylitol or to taste)

How to make banana bread cookies
- In a large bowl, slice the bananas, add peanut butter and egg – blend until combined and bananas are mashed.approx. 300 g bananas, 1 egg, approx. 70 g peanut butter
- Add dry ingredients to the bowl.150 g wheat flour – all-purpose, 1 teaspoon baking powder, 1 teaspoon cinnamon, approx. 50 g sugar
- Blend briefly – just until combined.
- Finally, you can lightly mix the batter with a spatula and add any optional add-ins such as chocolate or nuts.
- Spoon large portions of the dough (I got 12 large cookies).
- Bake the banana cookies in an oven preheated to 180 degrees Celsius (top/bottom heat mode) for about 25-30 minutes.
- After baking, let them cool slightly and you can serve them still warm.

What are banana bread cookies?
Over the holidays, my bananas turned from yellow to brown again, and no one even wanted to look at them anymore. I don’t like to waste food and didn’t want to throw away what were still good fruits. I wondered how to use them, as there are already many banana cakes on the blog, including traditional banana bread cakes. Banana bread, or banana loaf, is a very popular simple banana cake in the USA and England. Often eaten even for breakfast, not just for dessert. I didn’t want to make another banana cake, so I started searching online and came across a recipe for banana bread cookies. The author made those cookies in a gluten-free version – with almond flour. I decided to make mine with regular flour and modified the recipe more “to my liking”. My cookies, thanks to the use of regular flour, turned out a bit differently and had a more “cake-like” texture.

Ingredients necessary for preparing banana cookies
To prepare my cookies, I only used what I already had at home, and I believe you won’t have problems with the ingredients either. Below is a condensed list of basic ingredients and possible substitutes.
- bananas – I used 3 very ripe, soft, and highly aromatic fruits here. Mine were quite large and weighed almost 300g in total – after peeling.
- peanut butter – to add fat, I added peanut butter to the cookies, which also gave them a slightly nutty flavor. If you don’t have peanut butter, or are allergic to peanuts, you can use butter from other nuts – e.g., almond, or use regular butter, or vegetable butter.
- wheat flour – I used regular type 450 flour here, you can replace part of the flour with ground almond flour – e.g., use 100g of flour and 50g of ground almonds.
- sweetener – even though my bananas were sweet, the cookies didn’t turn out very sweet – even for me. Therefore, I suggest adding a little something sweet – it could be xylitol, erythritol, sugar, or, for example, a little maple syrup.

How to enrich the flavor of banana cookies?
If you wish, you can add some chopped chocolate to the cookies – if you’re not adding sugar, I recommend chopped milk chocolate or milk chocolate chips. Additionally, you can add some chopped nuts to the cookies – they will add crunchiness. Raisins will also work well – if you like them. If you want the cookies to be more nutritious, you can add half a cup of rolled oats to them.

How to prepare gluten-free banana cookies?
If you want to prepare gluten-free banana cookies, first – you can replace all the flour with ground almond flour – use 150g of it, which is about 1.5 cups. You can also use a mixture of gluten-free flours – for example, use 50g of almond flour and 100g of another gluten-free flour – such as millet, gluten-free oat, or buckwheat. Remember to also use gluten-free baking powder then. You can also use 1/4-1/2 teaspoon of baking soda instead.

How to bake banana cookies?
Spoon the banana bread cookies onto a large baking sheet lined with parchment paper. Leave slight gaps between the cookies so they have some room to spread. Place the baking sheet with banana cookies into an oven preheated to 180 degrees Celsius (top/bottom heat mode) and bake for about 25 minutes. My cookies were soft, so I checked with a stick to see if they were baked through. After baking, let the cookies cool slightly, and then you can serve them.
Such banana bread cookies will be a great snack during the day; you can pack them for your children for school so they can eat something good during break time. Add your favorite toppings to make them even tastier! They taste best on the first day.
