- 225 g wheat flour – all-purpose (1.5 cups)
- 50 g ground almonds (almond flour – 0.5 cups)
- 1.5 teaspoons baking powder
- 110 g butter (softened)
- 3 tablespoons oil
- 2 eggs (size L – at room temperature!!)
- 200 g sugar (I used powdered sugar – 1⅓ cups)
- 1 teaspoon almond extract (optional)
- approx 125 g rhubarb (finely chopped – 1 cup)

- 75 g wheat flour – all-purpose (0.5 cups)
- 50 g sugar (¼ cup)
- 50 g butter
- approx 10 g almonds (chopped or flaked)

How to make almond muffins step by step
Step 1 – preparations
- Wash the rhubarb, trim the ends, and cut the stalks into thin slices (about 0.5 cm thick) – I used two stalks.approx 125 g rhubarb
- Preheat the oven – to 180℃ (top/bottom heat mode) or 170℃ (convection mode).
- Mix together the flour, almonds, and baking powder.225 g wheat flour – all-purpose, 50 g ground almonds, 1.5 teaspoons baking powder
Step 2 – preparing the almond batter
- Transfer butter, oil, almond extract, eggs, and sugar to a mixer bowl.110 g butter, 3 tablespoons oil, 2 eggs, 200 g sugar, 1 teaspoon almond extract
- Mix them together until light and fluffy – mix for about 2-3 minutes on high speed.
- Then add the mixed flour in 2-3 portions – mix briefly on low speed, just until combined.
- Stop mixing when there are still traces of flour visible.
- Add the chopped rhubarb to the batter and mix everything with a spoon.
- Spoon portions of the batter into the prepared liners.
Step 3 – preparing the muffin crumble topping
- Transfer the crumble ingredients to a bowl and rub them together with your fingers or a fork – until a lumpy and crumbly mixture forms.75 g wheat flour – all-purpose, 50 g sugar, 50 g butter
- Sprinkle the crumble over the muffins.
- Finally, sprinkle the tops of the muffins with chopped almonds or flaked almonds.approx 10 g almonds
Step 4 – baking muffins
- Place the muffin pan into the preheated oven and bake for about 20-25 minutes – until a wooden skewer inserted comes out clean.
- After baking, let the muffins cool slightly before serving.

In spring, as soon as rhubarb appears, I start baking sweets with this extraordinary vegetable. I usually bake some simple rhubarb cake, but recently I came across a recipe for these rhubarb muffins at Broma Bakery and decided to bake them. The muffins themselves are fabulously delicious! Fluffy and moist, and very simple and quick to prepare. This is a perfect recipe for sweet spring baking. And when rhubarb season ends, you can bake these muffins with other fruits! So be sure to save this recipe for later!

What ingredients are needed to bake rhubarb muffins?
To make these almond muffins at home, you will need a few basic ingredients. Below is a condensed list of products I used and possible substitutes.
- almonds – for the muffin batter you will need ground almonds (also sold as almond flour), you can buy such ground almonds in a store, but if they are not available anywhere, just grind regular almonds in a grinder. If you want the batter to be light, you can remove the skin from the almonds beforehand (if they have it) – the best way to do this is to pour hot water over the almonds and leave them for about 10 minutes, then drain the water and remove the skin with a sharp knife, it will come off more easily after soaking
- butter – extra butter with at least 82% fat content works best here, but you can also use mixed butter or vegetable butter
- oil – I used rapeseed oil, you can use any oil with a delicate flavor
- sugar – for creaming sugar with butter, I used powdered sugar – you can also use regular sugar – take 200 g or 1 cup
Can other fruits be added to muffins?
Of course! Strawberries, raspberries, or blueberries also go great with almond muffins. Strawberries should be cut into smaller pieces here. You can modify the recipe as you like.

Do you need to peel rhubarb for muffins?
Young rhubarb usually doesn’t need to be peeled – I didn’t peel mine, the skin also adds a nice color later. Just wash it thoroughly and cut it into smaller pieces. Older rhubarb may have tougher skin, which is worth removing.
How to make moist rhubarb muffins?
To make the muffins moist and fluffy, do not overmix the batter! After thoroughly mixing/creaming the butter with sugar, mix in the flour very briefly and gently. It’s enough to mix the ingredients only until they combine. Overmixing the batter with flour can result in muffins that are not as nicely fluffy and light after baking.

How to store almond rhubarb muffins?
After the rhubarb and crumble muffins have completely cooled, transfer them to an airtight container with a lid. If it’s not too hot and humid at home, they can stay in such a container at room temperature for up to 3 days. If they are to last longer, it’s worth storing them in the refrigerator. Almond muffins can also be frozen for about 3 months.
