How to make blueberry meringue step by step

    Step 1 – preparing the blueberry sauce

    • Transfer the ingredients for the blueberry sauce to a saucepan.
      200 g blueberries, approx. 50 g sugar, 1 teaspoon lemon juice, approx. 40 ml water

    • Heat everything together until the fruit softens and starts to break down.

    • Then remove the saucepan from the stove, transfer about 2-3 tablespoons of the sauce to a fine sieve and strain into a smaller bowl.

    • Set aside the sauce to cool – you can put it in the refrigerator.

    Step 2 – preparations

    • Turn on the oven to 100 degrees Celsius with fan assist (convection).
    • Prepare a large baking sheet from the oven – place baking paper on it, draw a smaller plate on it (approx. 20 cm diameter).

    • Transfer the egg whites to a mixer bowl and start mixing lightly.

    • When the egg whites start to slightly fluff up, gradually add the sugar and mix on high speed until it is completely dissolved.

    • To check if the sugar has dissolved properly, take a little of the beaten egg whites on your fingertip, rub the whites with another finger – if you don’t feel any sugar, the meringue is ready.

    • Then add the potato starch and lemon juice and mix briefly – just until combined.

    • lemon juice – instead of lemon juice for the meringue, you can also use liquid ‘citric acid’ or vinegar
    • egg whites – if you don’t have large (L size) eggs, it’s best to weigh them before mixing to have about 140-150 g

    Of course, you can use frozen blueberries here – you don’t need to thaw them beforehand. Just transfer them to a saucepan with the rest of the ingredients and simmer until they break down.
