- 2 egg yolks
- 100 g sugar (½ cup)
- 70 g wheat flour – all-purpose (½ cup)
- 10 g unsweetened cocoa (1 slightly heaped tablespoon)

- 500 g mascarpone cheese (well chilled)
- 500 ml heavy cream (well chilled)
- ok 100 g powdered sugar (⅔ cup or to taste)
- 2 teaspoons gelatin (+ about 60 ml cold water)
additional ingredients
- approx 320 g biscuits (for two layers)
- approx 500 g dulce de leche mass (in a can)
- approx 100 ml water
- 1 teaspoon sugar
- 1 teaspoon lemon juice

How to make caramel surprise cake step by step
Step 1 – preparations
- Line the baking pan with parchment paper.
- Preheat the oven to 170℃ (convection mode) or 180℃ (top-bottom mode).
Step 2 – preparing the chocolate sponge cake
- Whip the egg whites with sugar into a smooth, light, and very fluffy mass – I whip for a few minutes at the highest speed of the mixer.2 egg whites, 100 g sugar
- Add the egg yolks to the whipped egg whites and gently mix – with a kitchen whisk or at low speed of the mixer.2 egg yolks
- Sift the flour and cocoa through a fine sieve and add to the egg mixture in the bowl.70 g wheat flour – all-purpose, 10 g unsweetened cocoa
- Gently mix the batter with the sifted flour and cocoa.
- Transfer the batter to the prepared mold and spread an even layer over the entire bottom.
- Place the mold in the preheated oven and bake for about 12 minutes – until a dry skewer comes out clean.
- After baking, cool the cake.
Step 3 – preparing the mascarpone cream
- Pour cold water over the gelatin, mix, and set aside for a few minutes to swell.2 teaspoons gelatin
- Transfer the cream cheese to a large bowl, add the cream and sugar – whip at high speed until a thick cream is obtained.500 g mascarpone cheese, 500 ml heavy cream, ok 100 g powdered sugar
- Briefly heat the set gelatin in the microwave (about 10 seconds) until it becomes liquid.
- Add a large spoon of whipped cream to the gelatin and mix thoroughly.
- Pour the gelatin into the rest of the cream and blend thoroughly until combined.
Step 4 – assembling the cake
- Soak the sponge cake in the mold with water, sugar, and lemon juice.approx 100 ml water, 1 teaspoon sugar, 1 teaspoon lemon juice
- Spread about half of the mascarpone cream over the sponge cake.
- Arrange a layer of biscuits on the cream, gently pressing them down.approx 320 g biscuits
- Spread the dulce de leche (kajmak) mass over the biscuits and spread thoroughly.approx 500 g dulce de leche mass
- Layer the second layer of biscuits.
- Finally, spread the rest of the mascarpone cream.
- Chill the cake in the mold in the refrigerator for several hours to soften the biscuits.

I prepared my cake today for Easter, and it disappeared in no time. My mom gave me the idea for it when she treated me to a similar cake bought at a pastry shop for Christmas. It tasted so good then that I decided to prepare my own version. This way, I ended up with a delicious layered cream cake, with an added biscuit layer and dulce de leche. The cake is delicately sweet – but not too sweet, it cuts beautifully, and yields a large baking sheet. That’s why this cake is great for various holidays and family celebrations. What ingredients are needed to prepare the cake?
To make this cake at home, you will only need a few basic ingredients. Below is a condensed list of products I used and possible substitutes.
- dulce de leche – I used a can of Gostyń dulce de leche here – weight 510 g, but you can use any dulce de leche
- mascarpone – this is an Italian creamy cheese that you can easily find in any large store and discount supermarkets
- heavy cream – I used 30% cream in a carton, you can also use 36% cream, then you won’t need to add gelatin, because it is thicker and more compact
- biscuits – use any biscuits – mine are plain, but they can also be chocolate – depending on the exact size of the baking tin, you will need about 300-400 g of them

How to diversify the taste of the caramel surprise cake?
If you don’t like overly sweet cakes and prefer cream cakes to be balanced with something slightly tart, then after soaking the sponge cake, you can additionally spread it with a slightly tart jam – e.g., raspberry, blackcurrant, or cherry. Such a fruity accent will work perfectly here!

Can you make a no-bake caramel cake?
If you don’t feel like or don’t have time to bake a chocolate sponge cake, you can make a no-bake version. Simply arrange a layer of biscuits at the bottom instead of the sponge cake. Then, do not soak them, just immediately apply a layer of mascarpone cream.

How to store the caramel surprise cake?
Due to the cream filling, the cake is best stored in the refrigerator. After preparation, put it in the fridge overnight so that the biscuits soften from the cream and the cake is easy to slice. Due to the heavy cream in the cake’s filling, it’s best not to freeze it, but to consume it immediately. The cake stored in the refrigerator is good for several days.

Can a lactose-free version be made?
Yes, by using plant-based substitutes for butter, cream, and mascarpone – the taste will still be creamy and delicious!
