Today I invite you to try a delicious chocolate cheesecake with raspberries on a cookie crust. It’s a no-bake cheesecake, so you don’t need to turn on the oven to prepare it :) The cheesecake comes out nicely chocolatey, with slightly tart raspberries inside. It looks beautiful when sliced and tastes even better. You absolutely must try it, especially if you like chocolate cakes.

  • 150 g biscuits
  • 1 tablespoon cocoa (unsweetened)
  • 75 g butter (- melted)

  • 1 kg quark cheese (for cheesecakes – cream cheese will be good too)
  • 100 g chocolate (dark)
  • 100 ml heavy cream (- I used 30%)
  • 2 tablespoons cocoa (unsweetened)
  • 200 g powdered sugar (- 1 and 1/3 cups or to taste)
  • 3 teaspoons gelatin (- slightly heaped)
  • some water (cold – for gelatin)
  • about 250 g raspberries

How to make no-bake chocolate cheesecake with raspberries

  • Grind or crush the biscuits together with cocoa into a fine powder.
    150 g biscuits, 1 tablespoon cocoa

  • Add melted butter and mix.

  • Line the baking pan with parchment paper.
  • Pour the biscuits into the pan and press them to form the base.
  • Break the chocolate into pieces and melt it together with the heavy cream and cocoa – mix thoroughly and set aside to cool.

  • Transfer the quark cheese to a large bowl, add powdered sugar and cooled chocolate – blend until combined.

  • Pour a little cold water over the gelatin – just enough to cover it. Set aside for a few minutes to swell.
    3 teaspoons gelatin, some water
  • Briefly heat the gelatin until it becomes liquid (I heat it for about 10 seconds in the microwave).
  • Add a heaped tablespoon of the cheesecake mixture to the gelatin and mix thoroughly.

  • Pour the gelatin into the rest of the cheesecake mixture and quickly blend.
  • Spread about half of the chocolate mixture onto the biscuit base.

  • Place raspberries on the cheesecake – gently press them into the mixture.

  • Spread the rest of the cheesecake mixture and smooth the surface.

  • Refrigerate the chocolate cheesecake until set.
  • Before serving, remove from the pan and decorate as desired.
Uwagi
Instead of adding cocoa to the biscuits for the base, you can use chocolate biscuits. 
If you like very chocolatey cakes, you can use 200 g of dark chocolate for the cheesecake – in that case, do not add bitter cocoa. Melt the chocolate in 150 ml of heavy cream.
If your quark cheese is looser and thinner, use more gelatin – add an extra heaped teaspoon.

No-bake chocolate cheesecake with raspberries – notes

This no-bake chocolate cheesecake is so delicious that I made it twice recently!

Nicely chocolatey, not too sweet, and with wonderful raspberries inside that perfectly complement the chocolate.

I love such “heavier” chocolate cakes, and this cheesecake is exactly like that.

Velvety, melt-in-your-mouth, and addictive.

How to make chocolate cheesecake with raspberries – tips

You will need chocolate here – bitter chocolate is essential, and bitter cocoa too – so that the flavor is deep. If you wish, you can use more chocolate instead of cocoa.

Second thing – quark (farmer’s cheese).

I highly recommend a good, full-fat quark in a tub here – as always, I recommend Piątnica or Mój Ulubiony. They have a wonderful consistency and are not watery.

If you use a looser quark, add more gelatin just in case.

How to prepare gelatin for no-bake cheesecake?

Gelatin – we add it to make the cheesecake more firm. I first pour a little cold water over it, and only when it swells do I briefly heat it. I recommend heating it for about 10 seconds in the microwave. You can also place it in a bowl with hot water and wait for it to dissolve. Gelatin cannot be overheated, as it may lose its gelling properties. Instead of gelatin, you can also use agar. To prevent the gelatin from forming “lumps” in the cheesecake, you should temper it first. Add a little of the cheese mixture to the heated gelatin and mix thoroughly. Only then pour it into the rest of the cheesecake and blend.

Raspberries – it’s best if they are fresh. They will look beautiful when sliced, as they will retain their shape and won’t release juice. I previously made this cheesecake with frozen raspberries, and it wasn’t a completely good idea. The raspberries thawed during the process and became watery. It didn’t look very appetizing, although the cheesecake tasted excellent. Therefore, if you don’t have fresh raspberries, thaw the frozen ones beforehand and drain off any excess juice.

How to decorate chocolate cheesecake with raspberries?

I opted for simplicity (and calorie reduction ;)) so I sprinkled the top with a little grated dark chocolate. Plus a bit of raspberry fruit jelly and fresh raspberries.

You can also sprinkle the cheesecake with bitter cocoa and arrange raspberries on top.

Another suggestion is whipped cream and raspberries.

I hope you’ll be tempted to prepare this no-bake chocolate cheesecake and savor its extraordinary taste.

You can also make a simple chocolate glaze. I recommend heating about 50 ml of 30% heavy cream in a saucepan, and when it’s warm, add broken milk chocolate (100 g). Stir the chocolate until it melts. Let the glaze cool, then pour it over the top of the cheesecake. Finally, you can also arrange raspberries on top :)
