Recipe for cheesecake with Biscoff (Lotus) cookies and cream

Today I invite you to try the already famous Biscoff Lotus cheesecake. This cheesecake is currently dethroning the Oreo cheesecake after many years of its glory :) Biscoff Lotus cookies only recently appeared in our country, so we haven’t had time to become fascinated with the new flavor. Therefore, I am pleased to present my Biscoff cheesecake with cookies and Biscoff cream. Bake it for a special occasion, or for a weekend coffee treat :)

  • 150 g cookies (Lotus (Biscoff))
  • 75 g butter (melted)

ingredients for biscoff cheesecake

  • 1 kg cheesecake curd cheese (I used fatty Piątnica from a bucket)
  • 4 eggs (size L)
  • 2 tablespoons potato starch
  • 200 g Biscoff spread
  • 100-150 g sugar (- to taste)
  • 120 ml natural yogurt (- if using thick and fatty curd cheese)

  • approx 100 g Biscoff spread
  • a few Lotus cookies (crushed)

How to make Biscoff cheesecake step by step

  • Crush or blend the cookies into a fine powder.

  • Add melted butter to the cookies and mix.

  • Transfer the cookies to the baking pan and press them into the bottom.

  • Transfer the curd cheese to a large bowl, add eggs, sugar, potato starch, and Biscoff spread.
    1 kg cheesecake curd cheese, 4 eggs, 2 tablespoons potato starch, 200 g Biscoff spread, 100-150 g sugar

  • If you are using thick, fatty curd cheese (like Piątnica, or my favorite), you can add half a glass of natural yogurt to make the cheesecake lighter.
    120 ml natural yogurt
  • Briefly blend the cheesecake mixture – until the ingredients are combined.
  • Transfer the mixture to the pan and smooth the surface.

  • Bake in an oven preheated to 150 degrees Celsius (top/bottom heat mode) for 1.5 hours.
  • After this time, turn off the oven, slightly open it, and leave it until it cools down.
  • Place the cheesecake in the refrigerator to chill for at least 4 hours (I like to leave it overnight).
  • Before serving, briefly heat some of the spread, and when it’s more liquid, spread it over the top of the cheesecake.

Biscoff cheesecake – notes

Some time ago, I was talking to my sister who lives in England, and she told me she was baking a Lotus cheesecake. Completely unaware, I didn’t know what kind of cheesecake it was, so she enlightened me and also brought a jar of Biscoff cream for me to try.

I did try the cream, yes, but most importantly, I got down to baking the cheesecake :)

The cheesecake with Lotus cookies and cream turned out delicious, so now I’m sharing the recipe with you.

You can get Lotus cookies at Biedronka – I bought them there several times.

These cookies are caramelized biscuits – so they have a darker color than our traditional biscuits.

The cream from these cookies is nicely sweet and has a very smooth consistency. When added to cream cheese, it gives it a slightly caramel color.

Unfortunately, I haven’t seen the cream in regular stores (if any of you have seen it in a brick-and-mortar store, please let me know).

I quickly checked, and you can easily buy it in online stores or on Allegro.

You can use Biscoff cream similarly to Nutella – for various desserts, pancakes, or crepes.

You can try to make this cream yourself – as a base, use my speculoos cream recipe made from speculoos cookies.

How to make biscoff cheesecake – tips

First, prepare the base from lotus cookies blended into a powder and mixed with butter.

Line the bottom of a springform pan with a diameter of about 22 cm with the prepared cookies.

I always mix the cheesecake batter briefly and only until the ingredients are combined.

I essentially mix all ingredients at once – I put them into the mixer bowl and mix them together.

I pour the prepared cheesecake batter onto the cookie base and put it into the oven.

What kind of cream cheese to use for lotus cream cheesecake?

As usual, I use full-fat cream cheese from a tub (preferably Piątnica). This cheesecake turns out quite dense, and if you use Piątnica cream cheese, I recommend adding about half a cup of natural yogurt to the cream cheese mixture. If you use a more moist and looser cream cheese, you won’t need to add yogurt.

I baked the cheesecake at 150 degrees Celsius for an hour and a half, then cooled it in the oven and chilled it in the refrigerator.

I briefly heated some Biscoff cream in the microwave and spread the liquid cream over the top of the cheesecake.

Finally, I sprinkled it with crushed Lotus cookies.

The Biscoff cream cheesecake prepared this way tasted very good to us – and since I also took it to our mothers, the rest of the family also had a chance to taste it.

Therefore, I can recommend it without any qualms :)

So, buy Biscoff cookies and cream and prepare this cheesecake for a weekend dessert. And can you make a no-bake Lotus cake? Of course, you can, I will try to prepare such a version of no-bake Lotus cheesecake as well.

By the way, I also recommend the recipe for the previously mentioned Oreo cheesecake :)

The cheesecake was eaten by several people and everyone enjoyed it immensely :) My husband indulged in it before the IX Kampinos Ultramarathon and it gave him strength for that tough run.
